Man, you improved on a masterpiece! We love ours. Only 15 years old now, but worse damage than yours. I don't have your skill or tools. I think we'll just fill the handle with epoxy and finish it off for the next 15.
Love the way you solved the curve handle detail... I was looking to see if anyone else had this problem when I found this video. I have a few of these knives with the same handle design that need new handles... here we go!
For future info, Wusthof knives have a lifetime warranty. Contact them, send them photos of the damaged handles, and they will replace them free of charge with new knives. And you keep your old knives. Best customer service ever.
In the past Wusthof used to replace knives with broken/ cracked scales but are less likely to do so today. They have gotten mu ch tougher with replacements, especially if the knife was put in dishwasher.
Fiskars is the same way...3 years later. 😉

I really wanna thank you. I have a knife about a 10" sontonku type that has almost an almost dentical handle. I have a full woodshop and the skills to use it. My knife has a crack in the handle and with the way the rivets are I thought it was molded. I didn't think k I'd be really able to repair it, which had me a bit distraught. That knife has been with me for about 20 years. I believe with the curves, my belt sander, spindle sander, band saw, and scroll saw it shouldn't be a major undertaking. I'll probably reprofile the handle a bit as well. To boot I have some very figured walnut and hickory. Again thanks I'll check to see if you did make the instructional as I just found your channel.

Brilliant restoration results. It's gorgeous, and it has a custom bespoked fit.
Your methods are up to par. I learned a few things working with a knife maker in Berlin. All is good. The final part of the sharpening process could include tuning the edge with a piece of leather. This actually makes a difference as you will notice.

I decided a much easier way to do the handle, would be to take the two pieces paint the insides that are going towards the metal with clear Epoxy to seal them. Then rivet them on without trimming. Tape and fill the gap between the two pieces of wood with my tinted epoxy, the vacuum chamber is optional but I didn’t want any air bubbles. Once the Epoxy is set after a few days, take it to a bandsaw and trim out the silhouette of your handle, then Sand.
I think this would be a lot cleaner and easier
