    Here in the US in California we have mild medium sharp for the tanginess and then we have a couple of aging categories similar to how you and Gavin have mentioned other Cheddars such as vintage and aged I think. I almost always get sharp if I can find it. Ours is of course mostly very orange but once in a while you'll find a quote white quote cheddar.
    Also Julia, I'm very pleased to see how you are getting comfortable with your medium. You are letting your personality show and I really get a kick out of your dry humor and asides. I look forward to more content from you both as a cheese lover and as a amateur historian.

      Your sharp cheddar sounds similar to the vintage cheddar here: crumbly and strong. Ours aren't orange though.

    Hello! I'm so happy to have been led to your channel! Call me Grommet or Wallace I love cheese! It should be a food group. Personally I like my Cheddar extra old... scrape the mould off with a knife and have at it with a buttered scotch bap and an orange quartered with some tea strong enough to melt the spoon. That and a can of Sardines in mustard sauce was a heavenly lunch for my Grandpa and me. I miss him.❤

    I've been looking forward to this is video since coming across cheese history! I love a really mature cheddar, the stronger the better! But not eggy!
    I think it's a shame there's not a protected status.

    My favorite Cheddar cheese is simply the Curd Cheddar which is very popular here!

    We generally have four types of chedder, in our supermarkets in Uk.. Mild, medium, mature, and extra mature There are lots of others at small independants and farmers markets etc.. Which are better quality and more pricey. I personally prefer mature, as an all round chedder.

    Also the cheddar here in New York is particularly sharp and has a very specific taste that I can't quite describe but I definitely know it when I taste it. New York cheddar is really a type in and of itself and I've seen sold all over the country and in Canada as well.

      Thanks. That's interesting to know about New York cheddar. I have heard about other distinctive American cheddars but not New York.

    Irish white cheddar. Slightly hard is my fav... But being from West Coast, Tillamook cheddar grilled cheese is my childhood. With some tomato soup 😘

    Cheddar cheese I feel is often overlooked as it’s often thought of as a topping for other foods. Nothing wrong with that. But I suspect the Cheddar cheese back in the day was thought of as a delicacy. My choice is blue cheese and Wensleydale.

      It's one of the downsides of being pretty much everywhere and the go-to affordable cheese. It's a pity because cheddar can be amazing

    Why would anyone use the regulations of the least good cheese-making country in the world? I'd have started in the country with the village of Cheddar in it.

    She's cute. And taught me a lot. I like Pañera and queso fresco for most my dishes but I learned. ..lol not asleep
