1/2 to 3/4 cup of butter (less is drier, more is clumpier)
1 medium onion
2 cups of (coarse!) cassava flour

I just made this with your black beans and rice, and ate it all for breakfast! Soo good.
The texture of this farofa is crunchy and the flavor is mild almost but not quite sweet, oniony, buttery and sends the beans and rice over the top!
I can't wait to try it on all of my soups. I think it would be great on creamy butternut squash.
They got cassava flour at Trader Joe’s, sprouts and sometimes Safeway and Luckys too
That’s great! Make sure the cassava flour isn’t too fine. It needs to be coarse for this recipe! 🤓
