If you live in an area that can lose power-get gas. You can light it with a match a cook until power comes back.
This is why I find it so fascinating that California is debating banning gas. With the rolling blackouts, and the massive extra burden on the electrical system with induction ranges everywhere, they will need some sort of solution.
You can always use an outdoor barbecue or camping stove
We have a generator - I kept my single burner in case of power outage, and we also have a gas grill.
Or you could just keep a portable butane or propane burner for emergencies. Like what I do.
That ways a lot more about your electric grid than the benefits of gas
I've cooked on gas all my life. I love the intuitive response and have no trouble cleaning my sealed stainless cooktop. Further, we live in hurricane country, and gas works when the power is out. I'll remodel soon and a new gas cooktop is on my list!
Power outages and gas seem to go hand in hand
We went with induction over gas in our kitchen remodel. We love it and do not miss the gas range at all.

I had used gas all my life but installed induction in my new apartment. I’ve been using it for three months and couldn’t be happier. In addition all of to the advantages mentioned in the video, I had my cooktop flush mounted into soapstone. In addition to being a beautiful design statement, flush mounting the cooktop essentially doubles my working counter space in my small galley kitchen. I got an inexpensive silicone mat and now roll all of my pastry on my cooktop. Definitely not something I could do before with a gas stove.

Just finished a full on main floor renovation. Took gas out completely and went with induction. While in a makeshift kitchen we purchased a two burner induction unit that I could practice on. Absolutely love its ability to heat up quickly and simmer properly. No real heat around the pot if you accidentally touch. Yes after 35 years I needed new pots anyways so very easy to donate old and in with the new. We decided if we need the “GAS” feel we will wheel out bbq. Canada zone 4b. Doesn’t matter snow or not.
I like the idea of getting a smaller induction burner (I think IKEA has one) to try and practice on before making a decision!
100% induction! We have one and will never go back. I just visited my son who has a gas stove. Made a dinner and a breakfast. The gas stove was slower and made the kitchen got so hot. Then cleaning below the grates is a pain. Induction cooktops stay cool so it is much easier to clean.
Amazing how many people switch and never want to go back!
I've just made the decision to go with induction. It takes me away from using a fossil fuel, and is cleaner and healthier for my cave-like flat with no cross ventilation and the kitchen at the darkest point. I'm only having to replace 2 pans in the process. While mine is yet to be installed, a friend has just started using one, and he says it's fantastic, faster, cleaner, with more precise heat control than his previous gas cooktop. I'm really looking forward to it.
We renovated our kitchen last year. The only things we kept from the old kitchen were the dishwasher and a three year old fridge. Walls, drop ceiling with flourescent lights all gone. I chose to switch from gas to induction and I'm very happy with the results. We had a 220 line that we were no longer using for an outdoor spa tub and were able to reroute it to use with the new induction range. The range that we purchased also came with compatible cookware! Faster cooking and easy cleaning, what's not to like?
My first thought....GAS, then listened to your information and now am reconsidering based on my personal lifestyle. Always good info on this channel.

Stick with gas. Ice storms, wind storms, sabotage, jackass politicians (but I repeat myself), gas is more reliable, more economical, and more responsible environmentally, humanitarianly, and geopolitically.
If it were me, I would choose induction. I prefer the clean up factor, air quality & that low safe simmer that you mentioned among other things. 😊

Doing a new build. Going induction (Wolf induction range) over gas this time because of the ease of cleaning and more control over cooking temps. Hope it’s as great as they say!
Each household should select the option that’s best suited for them. The kitchen space is a prime location for marketing and upsells, so there’s lots of noise to sort through, too. What do you need? What is a want? What might be FOMO? Etc etc etc :-)

I’ve had both, and love both. I’m going gas in the next renovation though because I’m choosing a freestanding cooker. I’m given to understand that often when the induction cooktop breaks, you have to replace the whole unit. Oven and all. Whereas gas ranges can be more easily repaired. So, I’m going gas.
Almost all the stoves I've used have been gas and I love them -- way better than those old electric stoves. Then I moved into an apartment with an induction stove and *loved* it. Holy amazing cooking and cleaning, Batman! I bought a house, and it came with a gas stove, but I'm definitely looking at installing the wiring and buying an induction stove. Long term, my goal is to install solar and a battery when the roof needs replacing, so we'll be able to power the stove even during power outages 😀
In defence of the old electrics, the glass top ones are very powerful. Even if they were hard to use. I learned on glass top electric and used gas for a time, and I could not bulk cook on gas like I could on the glass top electric. Because on gas so much heat is lost to the air, a 10000 btu gas burner feels like a 3000btu electric or induction burner.
Not I use Induction and it is better than both gas and old electric
Currently we have gas but we are talking about doing both in the new house (2 burner gas, 4 burner induction). Where we are planning to build it looks to be more economical to go full solar than to run a line to the grid. By having both we can use what makes the most sense at the moment. We also are doing electric heat with gas fireplaces just in case.
I have a few clients with both in their kitchens. Usually it is to get a very specific style burner (wok for example), and then 4 burner induction for everything else.
Good thinking. I have always used gas, with an obligatory electric oven 😢, but after listening to this induction does sound appealing.
@@melaniekeeling7462 as a chef I enjoy my induction equipment in the restaurant but I will probably never go fully induction at home or work. They both have pros and cons but together they make a high versatile line.

If you, or friends or family have a pacemaker, don't get induction as it interferes with the pacemaker.
Also, induction cooktops can scratch and look terrible over time.

Induction, without a second thought. We have had both a professional style gas range and an induction cooktops and while I was sorry to have to retire my copper jam basin to decor, I will never go back to gas. My reasons are in order of importance:
1.not using fossil fuel ( especially if you have solar panels or use a provider relying on renewables).
2. Ease of cleaning/
3: performance ( as you said much easier to simmer, for my pricey gas range I had to even try a simmer diffuser plate on top of the burner without terrific success then resorted to use a portable induction burner to leave things on to simmer without scorching). Induction is faster yet also more precise( no more burning your caramel in a spilt second)4. Safety. Induction will turn off if it doesn’t detect a pan.
4. I could be completely wrong about this last point but it seems to me that this is the future of stovetop cooking. We have recently moved back to the US and were very surprised to see that induction hasn’t completely taken over the way it has in Europe.
Now, as for the reliance on electricity, I hear the arguments and yes, if you lose power very often and do not generate any yourself then I imagine you are taking a risk, however that can be remediated with a portable gas burner stored in a garage or pantry if losing power is a rare occurrence.
I also like keeping in my pantry a portable induction burner to use on a table outside when deep frying or cooking with pungent spices like curry.

Induction! I have been using it for the last 2 years and I love it. I have solar panels and saving money.
When I was younger I almost lit my parents house on fire with a gas stove. I have never wanted a gas stove since then. I have an electric cooktop and I'm leaning towards getting an induction once it goes out. Cleaning is also a major factor, my mom spends at least an hour or two a week cleaning her stove, I just wipe mine down and it's done.
I would prefer gas becuase I don't like touch screens, however I might have to put the cooktop on an island so then I have the issue with the hood. With induction, you might be able to get away with a downdraft but not on a gas. Having said all that I don't mind the look of the hood, personally. I think they look cool. I get that it may get in the way depending on your situation, however it also helps define the kitchen from the next room.
I have used gas in vacation rentals, but not in my home. I have electric now, but I have chosen induction for the remodel. Though the renovation has not begun yet, induction pros just suit me better.

I had induction in the last home but i am going with gas this time. It seems you have way better control in shtf situations.
Had gas for 19 years, had induction for 18 months. Can't ever imagine going back to the smell of gas and the nightmare clean.
My induction stove is far faster and an extra work surface when it's off. It IS a no brainer for me.
PS if you put one in an island, get it with a built in extractor fan. I have a Bora unit with one and the integrated extractor is as good as any overhead extractor fan I've had.
Definitely induction! I never liked the open fire of gas, have glass cooktop now, so the next stove will be induction. I also think gas stoves are on the way out long-term as we go away from fossil fuels, so induction is the more future-proof stove. I also think that it will be increasingly easier to find craftspeople and replacement parts, the more common they become. In Germany induction stoves are already the norm. The only disadvantage I see in the change is that we would have to replace a lot of our pots and pans since they don‘t have a magnetic metal core and don’t work witj induction.
I say it depends on the kind of cooking your client does.

Seems like a no brainer to go with induction. We have gas and it takes forever to get a pot of water up to boiling. And I hear you about the ease of cleaning the surface of the stove. Our next range is going to be induction.

@@hsdesignstudio gas wastes a lot of energy and heat. Gas is always a mess... Meaning there is always a lot of cleanup. Don't love flames if there are kids around. Induction is so easy to clean. Induction is easy to get the temp for cooking correct. Induction doesn't waste energy. With induction you don't have to worry about fumes or dangerous gases in the air.
I live in hurricane land. Gas. No question.
Induction because although pricier, My cooktop has both power mode which behaves like gas, and Temperature mode which cooks like electric. It has the responsiveness of gas with the power and ease of cleaning of a gas top electric.
If in age group for pacemaker get gas, magnets not good. That’s the reco in Australia.

What it comes down to me....will I put a source of indoor air pollution in my new home? All the rest can be handled....

Induction, hands down - not hot to cook over like gas, but as responsive as gas. Easier to clean than gas! Basically induction is like a gas stove and a glasstop radiant had a baby that is superior to both of them.
Wel i am in the middel mij self the future is induction so i bocht 2 portable for practice induction straight to power out 1 from Ikea nice one 1 from the grocery Store liddl lol love the practice wen neadid sil have the gass 😉 in house might change it out in the Future
This certainly doesn't apply to all situations, but for resale I have found "most" people don't understand induction. To me it's like installing LVP, a better product but is the public in general ready for it?
That’s an interesting point. There are quite a few people that seem to think it is similar to the glass top electric stoves.
I've thought about the same thing. I looked at a house the other day, and it had induction. I knew what it was but was unsure how I felt about it. I wouldn't of had that feeling if I saw a gas range.

I will be going 2 gas and 2 ceramic, not induction as copper saucepans!
I'm in the same spot. I keep going back and forth. I can upgrade the power to get induction, so that's not a problem. There are no small children around, so that's not a concern. The air quality is a big consideration. I absolutely hate sealed burners they are impossible to keep clean, and the burnt on food is my biggest pet peave. I will miss the versatility of gas because I really wanted to take up Wok cooking. My cookware is already induction quality, so it's not a concern. I hate having an unnecessary level of technology in the kitchen because it breaks, and getting a repair service is always expensive and takes longer than you expect. I get that induction heats water faster, but that's not a real concern for me since I've used gas all my life. I just plan for the time. I can't clearly make this decision, so I'm definitely reading these comments. Help 🙂
The technology is a big thing for me too. I love the simplicity of gas and knobs...no touch screens or buttons. HOWEVER, there are some very real downsides.
I'm in the middle of a Reno and need to pick out a stove. The only thing that's keeping me from induction, at the moment, is I don't like touch screens. Ok for my phone, but I don't like them in cars and I'm not sure I would ever get used to it. There's something nice about the simplicity of dials for me, possibly the tactile feel, not sure.
