I uprooted a spider plant from soil. It has 12 inch long tap root. Can I break off a few inches and place it in water in a glass tea pot? Will it survive ?

Frankly speaking you should have used the french fries stand for herbs like chillies and fenugreek leaves.
The space inside the container would not have handled the roots of herbs and succulents have smaller roots.

Yes you can, just be careful about watering. They meed water less frequently compared to plant in soil.
