To be fair, white sugar technically isn't vegan either because they use pig fat to bleach it and make it white. You'd be shocked at all the different seemingly vegan things that are rendered non-vegan by human processing. But I don't think he was delving this deeply into it. I suspect he just wasn't totally sure.
All pumpkin bread needs butter spread all over it until it melts and then eat the pumpkin bread. You two cooking together brings back so many fun memories for this mom. Thanks so much.

Fyi. For non bakers, sugar is considered a “wet” ingredient. Dry is flour (whatever kind you use), corn starch an things like it, baking soda/powder, spices. Also try Splenda sugar substitute or their brown sugar substitute. Works just fine, as a diabetic it means it’s healthier for me to eat. Also in measuring flour you scoop into the cup with a spoon then level. You don’t risk compacting the flour and altering your outcome.
Matteo and Nick, another recipe you both might enjoy is Pumpkin Chocolate Chip Cookies. I got the recipe decades ago online and have made it for years and it's always a big hit. But make sure you always use semi sweet dark chocolate chips because I once used the milk chocolate chips and they were terrible. I tried looking online for the recipe I have and every one is different than mine, so instead of sharing a link, I'll just give it to you: 1 cup butter 1 1/2 cups sugar 1 egg 1 cup pumpkin puree 1 tsp real vanilla 2 1/2 cups flour 1 tsp baking soda 1 tsp baking powder 1 tsp nutmeg 1 tsp cinnamon 1/2 tsp ginger 1/2 tsp cloves 1/2 tsp salt 1 cup semi sweet chocolate chips Preheat oven to 350F and lightly grease cookie sheet. In large bowl, cream butter and sugar together until light and fluffy. Beat in egg, pumpkin and vanilla. In separate bowl, combine the dry ingredients; flour, baking powder, baking soda, salt, nutmeg, cinnamon, ginger and cloves. Add dry ingredients to creamed mixture, mix well. Add chocolate chips and mix in. Drop by teaspoons onto well greased cookie sheet. Bake at 350F for 10-12 minutes or until light brown.

I have a cream cheese filling recipe that you can add for extra deliciousness: 4 oz softened cream cheese, 1 egg, 1/4 c sugar, 1/4 c flour, 1tsp vanilla. Mix together till smooth. Fill bread pan with 1/2 pumpkin batter, spread 1/2 of cream cheese mixture on top, add rest of pumpkin batter. Smooth pumpkin batter. Pour rest of cream cheese mixture in line down center of pan, use a toothpick to make decorative swirl pattern through filling. Bake as normal 350° 45 minutes-hour. 🎃
