- This creamy spinach quiche is amazing, delicious, packed with nutrients, and perfect for those lovely summer days and, the fact that it uses no flour and it is gluten-free makes it even more delicious low in fat and carbs, so what’s not to like?
Creamy and buttery gluten-free spinach quiche pie⎜Plant-based
INGREDIENTS:
SAUTEED SPINACH:
1 to 2 tablespoons olive oil
250g chopped fresh spinach
Salt to taste
Black pepper to taste
2 garlic cloves, crushed
DOUGH:
1 1/2 cup cooked chickpeas
3 tablespoons olive oil
About 3 tablespoons of cornstarch
Salt to taste
Black pepper to taste
TOPPING:
250g of firm tofu
Salt to taste
Black pepper to taste
1/2 teaspoon onion powder
1/4 cup olive oil
METHOD:
On a medium skillet over medium heat add the olive oil, then the fresh spinach, and salt, and stir until it wilts, then add the garlic and black pepper, and continue stirring until the spinach is cooked through and has no water on the skillet. Reserve.
Add all the ingredients for the dough to a food processor or a blender and blend until smooth. If your dough is too soft, add more cornstarch. The dough is supposed to look like play dough and feel soft to the touch.
Add all the ingredients for the topping to a blender and blend until smooth. If the filling is still too hard, add a little bit of unsweetened plant milk. Blend and reserve.
Add the dough to a 22 cm removable bottom mold, and pat it until the dough is evenly distributed on and around the milk. Prick it with a fork and place it in a 190C preheated oven for 15 minutes.
Mix the cooked spinach with the filling, then place it in the dough, drizzle the top with olive oil, sprinkle some dried oregano or dill, and put it in the oven at 180C for about 25 minutes.
CUPS CONVERSION:
1 cup = 250 ml / 8.45 oz
1/2 cup = 125 ml / 4.22 oz
1/3 cup = 85 ml / 2.87 oz
1/4 cup = 60 ml / 2.02 oz

My favourite quiche 2 - 3 decades ago used to have a tomato 🍅sauce as the bottom layer over the crust.
Over the tomato sauce, a creamy ''egg'' mix was poured over broccoli 🥦florets and leeks.
Grated melted ''cheese'' topped it..

They all like to sit or sleep on the table or kitchen counter,
or on top of the kitchen cabinets. The higher the better..
The cats especially sit on tables and counters if I have put a new clean napkin,
or a clean wrinkle free table cloth on them...

Faço leite de grão de bico e uso no lugar do tofu e com o resíduo faço a massa, já usei como recheio alho poró com lascas de tofú defumado, cogumelos e sobras de geladeira (cenoura e abobrinha ralasas). Quiche é vida! rsrsrs

In non-vegan cooking, we use an egg white wash on the crust for the last ten-ish minutes of the parbake. That allows the protein of the egg white to bake and seal in the crust ensuring a flaky crust even if your filling is pretty wet.
Since an egg white is basically protein, water, and some minerals... do you think you could replicate that function with some vegan protein powder, water, and a mineral mix? (The minerals are important as they help the protein and water mix into a more uniform end result.) I'm not sure if the amino acid composition is important to the function. Also, you would have to choose a vegan protein that was more neutral in flavor or that would compliment the dish being made.
Since I'm not vegan, I will just continue to use an egg white. But I am a curious person and I was wondering if maybe there was a way to replicate that. If so, it could really help vegan people who are using wet fillings.
Sure, you can soak some whole linseeds in water, pass the seeds through a sieve and use the “egg white” that it produces , it’s just perfect for this purpose, I believe. 😻

Would aquafaba work? From the drained chickpeas? Absolutely LOVE Nico...and hearing your old lady drinking. Mine sounds the same. Too darling. Thanks for this fabulous recipe. I don't have tofu but will make a thick roux (bechamel) from flour and plant milk. Hopefully that'll work too. Bless you and thank you
@@angieweisswange5873 I haven't tried it, but aquafaba is a starch-laden liquid which allows it work for whipping up or thickening. The egg white works because it's basically just protein, water, and minerals. In the end, it's the protein being exposed to that dry, high heat that creates the "shell" which acts as a water barrier to keep the crust dry/flaky.
To be honest, I'm not even sure the linseed/flaxseed would work because of the different macro-nutrient composition. Would the fat and soluble fiber keep the protein from making a solid shell all across the crust? I simply don't know. Hmm... I may just have to make lot of things that need crusts at the end of the year for the holidays so I can test this out. Ha... I'm imagining my friends' faces now when I give them a pie with a warning that it might have a soggy crust. Ok, that feels a bit off. I think I will just make smaller dishes for myself when testing.

I just made this. Used thawed frozen spinach, squeezed the water out and took as much as I liked (there can never be too much spinach!!!😅), added nutmeg as indicated, and some oat cuisine.
The filling stays rather soft, even though I added a bit of cornstarch. Nevermind. Because IT IS DELICIOUS!!! EVERYTHING! The dough - wow, doesn't taste like chickpeas when baked, holds together nicely, is crispy on the edges - LOVE LOVE LOVE. For other fillings as well. The spinach filling tasted great even unbaked 😄. I overate.
I love that it's three main ingredients, that the tofu doesn't make it bland or soy-like. It is WONDERFUL! Thank you, Chef Jana!!!❤

Do you ever use an egg replacement or flax seed mixture in any of your recipes?
Do you have any 'taste like I'm eating runny eggs' recipes (other than with tofu)? 🤔Maybe cut the middle out of thinly sliced tofu seasoned with black salt and fry a half tomato dipped in chia/flaxseed in the middle? My mad scientist ideas are going crazy, but I know that YOU have the solution.

The filling doesn’t taste much like the feta because the spinach and seasonings took over so the tofu filling is more of a base for the spinach and seasonings. About the egg, since I never had eggs because the mere smell of it gives me nausea, I have never experimented with a replacement for runny eggs for example but if you have any more ideas, keep ‘‘em coming cuz you are quite an alchemist yourself!😻
About the egg replacement, yes I do use them quite frequently , and the type of replacement depends on the recipe! ❤️

Thank you so much ! I feed them regular cat food for urinary care since most of them have bladder issues. Cats are fully carnivores so no very good for them! 🙂❤️

@@LindaCasey Cats can also carry parasites including tapeworms, heartworm and fleas. If your cat goes outdoors, she can pick up parasite eggs along with soil bacteria between her claws. Because of this, cats should never be allowed on kitchen counters or anywhere that food is prepared or eaten.😮 I don’t feel this is a good or safe example for people who follow to learn from her great skills. Maybe a cat channel fine but not mixed with food prep. Its just common sense. Be professional and set a good standard.
