My friend loves the red lentil wraps, but, as you found out, they’re only good right after you make them. She did say the batter will last in the fridge for a few days, so you can make them fresh as needed and not have to soak more lentils. So if you incorporate them into a meal plan, you can try making extra batter on purpose for a few days worth of wraps.
Yeah they’re really great but only fresh the texture changes so much but good to know the mix can hang out for a few days in the fridge! That’s so helpful!
Those black bean burgers must be the easiest recipe ever! They look really good to me, and really customizable. I have beans and potato flakes in my pantry right now. There you go! Oh - you might consider getting a Breville smart oven. It's a larger toaster oven, and has several functions. I have the one with the air fryer function as well. I love it year round, but especially in the summer, when I can bake without heating up the whole house (and I live in the Midwest, not the desert lol). It's awesome! It's big enough to bake a 9x13 casserole dish, so very versatile.

Mine is Daal. I throw it in my instapot and takes like 15-20 min. So yum!! The black bean burgers and balsamic onions are on my list. I’m not big on tofu - texture thing- but the seasonings you put together for the tofu sounds fab!

My sister is coming to visit for a week in July so I am going to make her that baked tofu. I will also try those lentil wraps. My favourite pantry thing is lentil soup. My favorite pantry meal is from you! Chickpea “balls”. They are good in marinara, or as a meatball sub or in a wrap. Or Cold. Plain. They are fast, easy and delicious. Thank youuu!
Black bean burgers on the menu! I have a summer (who am I kidding? It's always summer here!) pasta salad. Cook the pasta, add veggies (your choice) and chickpeas, and your favorite vinaigrette. Mix while it's still hot and the pasta will absorb all the flavor as it chills in the refrigerator. Serve chilled or you can warm it if you want. Add more vinaigrette if desired. Could be served as a side to the bean burgers! And it makes a ton!

Our favorite pantry supper is one of your creations: black beans, pineapple, Rotel, and corn. Sometimes we have it on rice, pour it over potatoes, or when we’re camping, eat it up right out of the mixing bowl! I will heat it on the camp stove if we’re cold. It’s not quite as hot where we live in New Mexico as for you in Nevada, but when we swelter I love to use my countertop oven. It doesn’t take as long to heat up so we don’t use as much energy as with our standard oven, & it doesn’t heat up the house as much either, so there’s not as much of a demand on our AC. Sometimes I take it out to the deck when it’s really hot out & I’m cooking something that takes a while at a high temperature. We have a Breville Smart Oven Air and I really like its multi-functionality as well - we leave it on the counter & use it year-round.
I am not a countertop person for appliances which is why I got rid of my air fryer - I feel like they can be SO helpful but I find them to just be too much for me
I love love love simple bean burgers. Using any kind of bean (I like to combine 2 types) then adding a squirt of dijon mustard, tomato paste, and balsamic vinegar and they are popping with flavour😋 I use oats as my binder but never thought of using potato flakes. Will have to try that, thanks for the idea❤
frozen mix veggies + beans are life. if you eat tater tots, its soooo good as a topper. (Or regular potatoes) its a big ol plate of comfort food. sometimes i grab that when i forget to make my lunch for work. that tofu marinade looks good! & i def need to try your black burger recipe! i made the QUICKEST snack this evening bc i'm trying to cut down on my cream cheese. i love savory foods. so i used my can of artichokes & black olives & last handful of spinach i had in the fridge and just blended it all together for a dip or a spread, mix with a little olive oil & maybe garlic if you like. it was so satisfying & budget friendly.
As i watched your intro for a pantry challenge i thought, " Nope, i need to go shopping i don't have anything...." LOL now I'm making black bean and mashed potato burgers...i even have pickles to add... thanks for the inspiration!!❤❤
Tossing some info out there--If you get your lentils from Dollar Tree, they are decreasing the bag size from 16oz to 12 oz. They have a blue stripe, the smaller ones have the orange stripe. Fun video!
these burgers look perfect!!! we usually use the vegan zombie black bean burger recipe and add diced jalapeno. also right rice is only good right away for sure!!
I still have black beans and potato flakes on my list, this video just reminded why 😂 Also one thing we always have in the pantry is stuff to make pasta. It’s so easy to throw together on a busy night and it lasts for 2-3 dinners. I generally will have pasta, pasta sauce, small can of tomato sauce and diced tomatoes in the pantry. The added tomato products stretch the sauce vs buying 2 jars of sauce. While boiling the pasta, I put the sauce together and I add Italian seasoning and balsamic to jazz it up. I’ll also add tvp or vegan meatballs if I have them on hand. The other easy meal is baked potatoes, frozen veggies and cashews Chs sauce. So good and so filling. I like to double or triple the Chs sauce recipe and freeze leftovers for later.
My newest addition to my pantry that I've really been enjoying is canned fruit, which I use in my Ninja Creami instead of buying ice cream (grapefruit, pineapple, or applesauce are awesome). My long time favorite pantry staples are cans of green beans, tomatoes, white or pinto beans mixed with instant mashed potatoes. It's a quick easy meal when I'm pressed for time and want something I know I'll enjoy, especially when I don't feel like cooking. 🙂
I have thought about getting the ninja creami but I’m not a kitchen appliance person so I probably won’t but you enjoy it!! I keep seeing all the lovely creaminess people are making and they look so good!
Hi Miranda - I have a quick question - Have you ever microwaved Tofu? If so, would you please consider sharing how you do it? I'm newer to plant based eating and am still learning different techniques. Based on what I've read online, it looks like it can be microwaved, but I've never seen any of the UA-camrs I follow make it this way, so I've been a little hesitant to try, which is why I'm asking. Greek pasta salad with gluten-free pasta, chickpeas, yellow onions, peppers. Vinaigrette lemon juice, red or white wine vinegar and olive oil

I add extra protein using chickpea flour (gram flour) instead of normal flour to burgers or as a thickener. Adds a lovely taste too!

Lentil wraps! I just someone make split pea wraps! I think the key was cooking them longer than you'd expect so they don't get soggy later!
Oh! I’ll try that they weren’t necessarily soggy- more just the texture changed to a well - gummy? So maybe that could work!

You can eat it without cooking it! I don’t tend to microwave it because it changes the texture even when reheated!
