Hi Sylvia! Your making pumpkin bread inspired me to use your recipe. I noticed that no salt was listed so I added 1 teaspoon; perhaps that was an oversight when you put the recipe up? The batter needs salt to help it rise. I added some pumpkin pie spice too - a great idea! Mine rose pretty well, was not gummy, and tasted delicious. I used the normal loaf pan, so that may have helped. Blessings as you get back into more baking and other activities as baby allows!

In our home we love to make Pumpkin bread and Banana bread …. Right now in the states it is pumpkin spice everything !!! pumpkin spice tea ,pumpkin spice coffee ,pumpkin bread, pumpkin spice crackers you name it pumpkin spice cream cheese … Fall in the air… Except for where I live in Arizona so I decorate my house with the fall decor and I have scented candles to make things feel more like fall. I definitely get what you’re saying Sylvia! 😊

Sylvia usually you have to beat the eggs with sugar until a bit foamy and then add the oil and beat and other ingredients. Also you have to measure correctly the level teaspoons. Also preheat the oven

Hi Sylvia I decorated my house this weekend for fall, because fall started this weekend, About the pumpkin bread sometimes the temperature's too high and the outside was cooking faster than the inside, Or too much liquid in the bread The most important thing is the taste, soup days are coming up soon for me also,if you do not want ro get loaf pans right now I do not know If they sell foil ones because you can use it and dipose of it, another thing of you ever cannot find the pumpkin, use butternut squash ,and if you puree the pumpkin next time let it drain for a while,thanks for sharing
