So much potential, and my imagination runs wild! Some shrubbery and fencing would screen the house from the highway. On the ground floor, the shower room could be remodeled into simply a downstairs loo and a laundry/utility room. Upstairs, as you suggested, there's plenty of room for a full bath, and the top floor could become a great master suite! The garage and the room over it could be remodeled as a gite for family or rental use. I'd opt for a heat pump for heating/cooling. The outbuildings and field are perfect for horses, and the workshop could be either a good hobby space or an entertainment room. What a wonderful country property!
