Dal Ki Dulhan
Preparation time 10 mins
Cooking time 30 mins
Serves 02
Course: Main
Region: Uttar Pradesh
Ingredients
2 tbsp Ghee, घी
1 tsp Cumin Seeds, जीरा
1 cup Tovar Dal/
¼ cups Moong Dal, मूंग दाल
2 tbsp Split Masoor Dal, मसूर दाल
4-5 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
¼ tsp Turmeric Powder, हल्दी पाउडर
¼ tsp Red Chilli Powder, लाल मिर्च पाउडर
For Dulhan Dough
1 cups Whole Wheat Flour, गेहूं का आटा
¼ cups Ragi/ Nachni Flour
Salt to taste, नमक स्वादअनुसार
Water as Required, पानी
For Tempering
2 tsp Ghee, घी
2 Degi Mirch/ Kashmiri Red Chilli, कश्मीरी लाल मिर्च पाउडर
Pinch of Asafoetida, हिंग
¼ tsp Kashmiri Red Chilli Powder, कश्मीरी लाल मिर्च पाउडर
Process
In a saucepot, add ghee, cumin seeds, tovar dal, moong dal, split masoor dal mix well. Add water, salt to taste, turmeric powder, red chilli powder saute well and let it cook.
For Dulhan
In a mixing bowl, add Whole wheat flour, ragi flour, salt to taste and water need the dough well and keep it aside.
Divide the dough into small balls and roll each into small pooris.
Alternatively,make the rounds by rolling the dough into a big circle and cutting out small rounds using a small bowl or glass.
To shape the dumpling, lift opposite sides and bring together at the centre, then lift the other two ends and bring it to the centre, giving it a flower-like shape.
The hollow shape of the flowers allows the dal to enter the dumpling and become delightfully chewy.
After the dal is cooked, Gently lower the dumplings in.
Simmer the dal for another 10-12 minutes on medium flame, until the dumplings are cooked through.
For tempering
In a pan, add Ghee, degi mirch, asafoetida, kashmiri red chilli saute well. Add the tadka to the dal.
Serve hot.

We make the dulhan by cutting into squares..and then fold it..and we call it daal pittha in Jharkhand and bihar

I'm from Karnataka. Ranveer Sir said farmers are committing suicide it's really true because in north Karnataka bahut sukhi zamin hai waha sirf jwar, ragi, mirch boyi jati hai. Agar log sirf chawal aur ghehu ki demand kare to jwar aur ragi ki demand hee nahi rahegi esi Karan north Karnataka me bahut sare farmers suicide karlete hai. Dal ki Dulhan is well knw as Dal pithi in Bihar. Thanks for bringing this delicacy of North Western & Central Bihar to UA-cam. Dal Pithi has been Stephen food for us. We are eating this for generations and yet the taste is same as authentic as before earlier when my mother use to eat in her childhood and her mother use to eat in her childhood. I believe its because of the simple but tasteful recipe of this dish. We usually eat this when we want to eat something simple, easy to make, fast to make or even healthier to eat. In my family we all love Dal Pithi so much that we especially cook it in self made occasions. 😬

In some parts of UP East it's also known/called as Daal ki Pithee but the dish is very mouth watering & full of taste ❤️

मै राजस्थान से हूँ। हमारे घरमे बचपन से दाल ढोकली खाते आरही हूँ। मुझे पता नहीं कौनसे राज्य में दाल ढोकली की शुरूआत हुई। हमारे घर पर छिलके वाली मूंगदाल और थोडी सी चना दाल डालकर दाल बनायी जाती है और गेहूँ के आटे की गोल गोल छोटी पुरी से भी छोटी रोटी के आकार की बनाकर डालकर बनाते हैं । आपने तो दिल खुश कर दिया।

In Maharashtra it is made with small strips or diamond shaped roti pieces and it is called as वरणफळ or चकोल्या.

Thank you Chef Ranveer. This looks really interesting and new to me. Never had it before but definitely want to try 😋. Even we have started to rotate with the grains. We now include millet and buckwheat into our diet more frequently (because these grow in Europe as well). I made Khichdi with millet this week - tastes just as good. Sir, I am from Bhojpur district of Bihar and this dish is called 'Dal k Dulhin' in Bihar. It is a Bihari cuisine and all the dishes is bihar has one specialty; optimum utilisation. All our dishes use less fuel, mix ingredients such that one dish make a complete meal, and minimum use of utensils. 🙂 there are jewels in bihari cuisine yet to be explored by the world.
I like the way the story taling about dishes, and when, where these dishes having origin.. i like the way you cook like a Master Chef and of course you are a master chef of india..

Thanks for the very much needed information on Dals.. One from me too. Horsegram is also prominent in south india and is called Ulavalu in telugu. And in costal region of Andhra Pradesh there is a delicacy called Ulava charu. The recipe itself is very interesting. I challenge you to learn it and teach us that too. 😉
