I enjoy that you put the shoulder with bigger money muscle using your preferred rub on the Gateway, maybe expecting it to be best, then honestly comparing and choosing the PBC product as superior. Good on ya!
The PBC is just an amazing cooker. I think people think because it's smaller it can't hang, but there is a reason it's won award after award. The extra tenderness and flavor and smoke also comes from the meat dripping right on the coals and creating extra smoke from those drips. You can see it when the lid is opened before the spritz.
Steven Bornstein I haven't but I bet it would come out awesome! Cradle it in between both bars with 4 hooks just for safety...a must try for me now. 👍🏽
Smokin Joe's Pit BBQ Honestly you could probably get it done with 2. Get one in under the muscle and then hook the second one to it and bring it in down below. Hard to describe but I've done that with butts and briskets. When you wrap it though take it off and use the grate 😁.

I just bought the gateway drum smoker and have it it's first burn and it is the best smoker out there but the pit barrel I got 5 years ago and it's never let me down but I needed a bigger one and I'll use them everyday without a doubt

Haha! Not a surprise. At first glance, the Pit Barrel looks like an inferior product with no temp control. However, once you cook with it and trust the barrel to do its thing, Well, it is magical! The food always comes out incredible! It actually defies all logic. At the price point, they sell them for it is a no brainer! Great video.
Thanks for the video. I've been grilling and smoking for nearly 50 years and was really surprised when I got a Pit Barrel Cooker. It isn't the best grill or the best smoker I've used but it is easy to use and consistently turns out a great product using either method. And I like the format of your video. We deal with wind and rain and an occasional dog or grandson wandering around. Most of will never cook in a TV studio where things are rehearsed and redone. Good work !
Nice video! I have a Barrel House Cooker so it is close to your PBC. I always hang pork butts until the pork butt gets to 140 and then wrap it and place on the regular cooking grate. It seems to have a better smoke flavor , more tender, and cook more evenly. Its just what I do; I could be doing something wrong for all I know. Wouldn't the bigger smoker need more wood chucks that the smaller smoker to have the same amount of smoke flavor? I would like a brisket cook using these 2 smokers.
Hell Russyl, the Barrel House Cooker is nice! I wanted to keep the playing field even but yes, the Gateway smokee could use larger chunks. I've never cooked a brisket on the Pit Barrel but I've done several on the Gateway drum and they come out awesome!👍🏼

The only complaint I had is that the bright backlighting made the exposure level of the darker areas a bit too dark, which made it difficult to see what you were doing. Overall, I like the thorough process and walkthrough. Some BBQ channels leave some things out that you recorded from the process.
Yeah, I noticed that and the sound quality isn't the best either. I've used a Go Pro for all of my videos but I just purchased a new camera and mic. I like to leave the stuff in that most edit out. My thought process is that people need to see the behind the scene stuff...including some of the struggles you'll run into. There are some channels that I quit following because they edit too many things out or hold "secrets". My goal is to help take the nervousness out of bbq. I even asked one popular cook on UA-cam what the internal temperature on his briskets were and he said he didn't share that information. Wow!!! I quit following him. 😁

That competition-style cut-up and tasting at the end really reinforced the quality output of the PBC. I've seen that other smoker you "pit" it against (pun intended lol) in other BBQ'ers' videos and it always seemed like a serious piece of machinery! However, I fall into the camp of "KISS" (keep it simple, stupid!), thus I feel extra bells and whistles or fancy designs are NOT necessary to get a great result. All it takes is something that's well-engineered and does the job without being an over-achiever. In fact, I'd call the PBC "the quiet kid" in its class. It doesn't seem like it's capable of greatness just by assumption by looking at it. All the other more popular and expensively-designed rigs always laugh at it while they're out getting all the girls. Suddenly the PBC shows up and speaks up and shocks the world with its skills, and everyone is left dumbstruck at how good it is for how little it costs! I've been a Weber fan forever. I went through a brief stint where I used a CharBroil 4-burner gas grill, and while I enjoyed it, I always missed that charcoal essence in my food. I even went so far as to hack the CharBroil to use charcoal AND gas -- I removed the burners in the middle and placed charcoal in the bottom. It worked really well, and when I wanted the gas again, I just re-installed the burners and diffusers. However, as you can imagine, this was a bit of work and and inconvenience when I wanted to switch back and forth. When I moved, I got a used Weber from a friend and the balance has been restored with the universe once again! I will say though, that the gas grill made great pizzas with my pizza stone because you could really crank up the heat on that sucker. I think my only complaint about the PBC is that it lacks a temp gauge and that certain cuts of meat have to be adjusted to fit so they don't hang too close to the coals. But overall after all the reviews and information that I've seen on the PBC, it looks like the smoker of choice for anyone, even if your budget allows for a more expensive unit. Save your money, get a PBC, and buy some good meat instead! Much love, brother.
Depends on the size but no. I cooked butts last time on the rack. No where near the right bark I wanted or looking for. I hung my next one and oh my god. World of difference ! So I suggest hanging then wrapping. And if no room. Your forced to put in oven. So to sum it up. Great to hang but if the meat is too big ? Must look to cook remainder on rack in Another grill, smoker or oven

I have a pit barrel, but I would imagine the size had something to do with this? I’m going to try my pit barrel against my Oklahoma Joe Pro once I get it and see if there any differences. I have a theory but I’m going to try in the next few weeks.
From a West Texan: I had to laugh when you "sampled" your meat. Did you keep on "sampling" after the video was finished? I loved it BTW. I have one of the first edition PBCs. I drilled a 7/32 hole just below one of the rod holes (just large enough for my temp. probe to pass through), them made a simple probe holder to hang on the rod. So my probe tip is just at the grate level. I've observed that the temp in the center is measurably different in the center vs, the walls.

I bought one last summer and I'd buy another without question. I don't use anything else for shoulder, ribs and chicken now that I have this Gateway. I was on the fence about it for about a year, but I'm extremely happy with my Gateway.
PB is a excellent starter pit because of ease of use. Once you go to more advanced the Gateway or even the WSM is a excellent choice. I owned the PBC and afterwards now use my WSM 18 for most of my cooks along with my mini wsm.
Thanks for the info. I would never add any of these ingredients to my cooks but it's good info. I really don't know much about this guy but everything is open to criticism. 👍🏼
The PBC is excels at cooking poultry. For someone with $300 to spend on a cooker it’s hard to beat. I don’t know of any other cooker in that price range that’s as versatile. It’s a jack-of-all trades and master of none cooker. I don’t regret buying mine.

The Pit Barrel doesn't use a smoke-vent, so the smoke is more concentrated. The gateway with its vent is more free-flowing.

Might be a stupid question, but If you use the gateway on the grass will it kill the grass?

Thanks for the info. I would never add any of these ingredients to my cooks but it's good info. I really don't know much about this guy but everything is open to criticism. 👍🏼

The PBC is excels at cooking poultry. For someone with $300 to spend on a cooker it’s hard to beat. I don’t know of any other cooker in that price range that’s as versatile. It’s a jack-of-all trades and master of none cooker. I don’t regret buying mine.
