I have a good friend ,a older gentleman.He always telling about when he was a young man...He was telling about killing hogs ( around the 40s and 50s) when he was a kid. And how his daddy made real country sausage, using the peppers and sage they raised. I quizzed him about the sausage, and figured out the measurements. I don't buy store bought sausage anymore!
If you have watch much of my gardening videos, i often refer to someone older giving me advice or telling a good ole story. There is So much wisdom in the older Generations!

Real Country Sausage
Basic Measurements
2Tbsp salt (plain salt, canning salt, sea salt. no iodine...)
1Heaping tbsp black pepper
1/2 tbsp crushed red pepper (or to taste)
4tbsp of Sage (rubbed/ fresh ground also to taste)
5lb of pork ground (shoulder, roast, Boston butt, loin)
