These gluten-free and dairy-free almond cookies are the perfect bites to satisfy your sweet holiday cravings. It's deliciously dense, soft and chewy, and super easy to make with just few ingredients.
You'll need:
8 oz. almond paste (I used SOLO Almond Paste)
1/4 tsp salt (a pinch)
1/3 cup (69g) white sugar
1 egg white from large eggs (lightly beaten)
1/2 cup sliced almonds (finely chopped)
OTIONAL: 8 pcs. maraschino cherries (cut into half)
Makes 16 cookies
