Roasted Poblanos can never be under estimated. Cook over a high fire until blackened. Put into a bowl with a towel over them to make them easier to peal and give them a chance to cool down, at least 30 min to an hour and a half. Your fingers will tell you if you need to let them rest longer.
I never knew these were called Dragon Eggs. My grandmother taught me how to make them a long time ago. But we didn't use the jalapeno. Just bell peppers slices. Look forward to the next one. Razar.
There is a restaurant near by that did something VERY similar and called them Armadillo eggs. They were a quarter of the size and sold out in just an hour and a half or so.

Smaller size would cook faster so that makes sense but this way we have more surface area for the bacon smil
