NYT Cooking video producer Scott Loitsch is trying new things right now - like filming videos on his phone and baking his first-ever loaf of bread.
Let us know what else you want to see Scott try (sourdough bread, for those of us who can’t find yeast?) in the comments.

Petition for Scott to just start vlogging recipes he hasn't tried before!
For real.
Uhhh YEAH I would subscribe!
Show us the recipe!!!
@@jojensen6388 The recipe was in the video starting with min 1:00.
Adding my signature to the petition.
" Apparently this is the first loaf of bread Ive ever seen" That made me LOL. Good job btw👍
I had the same reaction when I cut into my loaf. I couldn't believe how easy it was. I have been making it almost every other day since I first tried the recipe last week. ua-cam.com/video/i1G2E6gAsrk/v-deo.html
Same lolll
i was going to make it this weekend anyway but a play-by-play from a non-bread maker makes it feel *so much more approachable*
I tried it last week too and also a first-time bread maker. You feel so proud and accomplished when you cut into it
I don't think I've ever commented on a you tube video before lol but you're adorable and your bread is too! I've being doing no time bread from the kitchn for a couple years because I'm impatient but you've convinced me and now going to try overnight. Thank you!!
Need to see this guy in many more upcoming vids! Alison Roman is our approachable relatable expert but this guy is ALL OF US trying out a recipe for the first time! Loved it.
He's quite adorable when reacting to the bread turning out. Far more entertaining than those shot-from-above-only-see-hands videos.
"Tell Scott I went crazy for this." - my mother
Please make more of these. I love the approachable and humorous delivery
Happy to see Scott make it into the big leagues! Really liked his stuff at Buzzfeed.
It's so weird to see Scott over here after being on Buzzfeed!
sameeeee
One way to simplify this even further: put the last rise on parchment paper and lift the loaf with parchment paper into the baking pot.
6:40 over here cheering for you. THE CRUMB. so great.
I normally just watch cooking videos in hope that I'll one day do them but seeing this dudes enthusiasm at the end makes me really want to try, I'm bready!
watching scott get so excited over bread is the cutest thing ever
I have been making the 5 minute no knead bread for a couple of weeks. It is actually pretty decent. It needs at least 3 days in the fridge to gain flavour and texture. I have baked bread for years and am pretty impressed.
You need to star in more of your own videos! You’re a star!!! ⭐️ and I lovvvve air bubble holes in my bread and get just as excited as you do when I see them!!!! 🤗👏
Good day, I have seen this recipe by different vloggers for about 4 years now but have never gotten down to baking it. Now is the time to do it as I have no work and due to Covid-19. My dough is actually at its first stage of resting now as I am typing this. What impress me about this bread are the perforated holes and its yellowish interior. I read that this is also the marks of a well-made French baguette. This recipe was publicised by NYT in 2006 and it's sad that New York has taken on a new meaning in recent weeks. May we all stay strong. Thanks for sharing this.
Thanks for being brave enough to share this with us. Good job! I hope this inspires others to go for it and start making their own bread!
I’ve been making this bread since 2008, but Lahey and Bittman put this method out in 2006. It’s a great recipe and I’ve done many variations including sourdough. Great job Scott!
This brought back the first time I made this recipe and had the same reaction. One of the best parts of baking this bread is listening to the crust crackle as it cools. Then, the butter!
Watching this brought a giant grin to my face and made me giggle to no end. Thanks for bringing some silliness and positivity into the world - we all need this right now!! :)
Baked this last night with similar results and also had that moment of awe like I never saw bread before. lol. It's also as delicious as it looks. Went to bed feeling very proud of myself. Highly recommend baking this as a mood booster! 😄
Thank you. I made this bread every few days, but I just realised watching you that I was doing a few things that I was not doing right.
What I don't understand is why there is such an abundance of no-knead recipes on the internet. I make bread and one of the best things about making bread is kneading. It is so therapeutic. The dough is warm and soft and silky smooth. You can knead it as long as you like (more therapy) or just enough to expel the CO2 if you don't have much time. I love this part of bread making. I can get my hands messy and be really a part of the process. Please don't deprive new bakers this joy.
Thanks for the motivation. I baked in parchment sling - dusted off my almost forgotten multipurpose clay baker (romertopf). Oval shape loaf - nice crust - similar result to your bake in dutch oven. Thanks again sir.
I actually just made this recipe yesterday, turned out really well! So easy and good results.
hope to see more of this video format! Your bread turned out so well!
So bloody helpful! I have made this bread resting for both 12 hours and 18 hours (It recommends both in the recipe) and you only get these big bubbles when you let it sit for 18. Also I was stressing about which side the seams were supposed to be, up or down in the oven, but it really doesn't seem like it matters!
Callum Spencer doesn’t SEEM to matter 😹. I see what you did there
I made this recipe and it worked out wonderfully! I was as excited as Scott was when I removed the dutch oven top!
Tempting recipe. Thank you for sharing.
Hey, I noticed the handle on your lid is that black “composite “ stuff, you can cover it with foil to help it last longer or replace it with a stainless one from Le Cruset. That type of handle/ knob tends to break after exposure to oven heat, the fumes are probably unhealthy, too.
I can imagine the lovely aroma of freshly baked bread filling your kitchen. Good job on your first attempt at bread making at home. I need butter on the bread. Yumz!
We need more videos of this delightful human being trying simple Home recipes! Please!
Don't put flour in the middle of the dough when folding. The folds should be done with sticky bits of dough. Raw flour in the middle of the dough won't get cooked properly since it's not incorporated in the dough. Don't proof on the bench - makes the bread flat. Put it in some kind of a bowl (in tea towel) so that it holds the shape better. Also, give the dough a good "tuck" a few times so that it holds it's shape. You made it even more flatter than it needed to be by squashing it in your hand to put in the Dutch oven. Transfer to a baking sheet/paper and plop the whole thing in the oven. Also - the bread needed to be baked for longer. The color on the crust is too light.
The bread seemed just perfect. Go away.
These are actual valid points. Instead of using “go away” and “it’s false”, try using 8th Grade Maturity and argue instead of providing no evidence at all and using semi-ad hominems
Thank you! I’m making this literally right now (trying to see technique via video) and just got to the final rest & was doing it on the bench, I just ran to the kitchen to put the parchment sling in a bowl instead.
This was such an awesome video! Thanks for making me giggle. Can't wait to try this
Adorable!
I am so inspired to finally make this bread after watching your video and saving the recipe for a long time now. Thank you 😊
I literally gasped when he took the lid off 😂 bread is such a pretty food
You did a great job, regardless of how simple that recipe is. Loving the structure of the bread. Can’t wait to try this.
So glad I came across this video!! It has become my go-to bread recipe ❤
It is beautiful I’m going to try it. Nice and crunchy and perfect inside. Good job!
Great job! I hope you will post more videos because you are hilarious and I loved your enthusiasm. I have made bread many times before but I thoughruly enjoyed this video.
So great!!! Mucho gracias😬
It looks amazing! I will start tonight. thanks.
Hey Scott - thanks for this recipe. I am learning to bake bread while being stuck at home during the COVID-19 shutdown. Thanks.
I made it!! Followed your recipe, it was fantastic!! Thank you!
This is adorable. Congrats on the successful bread.
I think your flatness comes from over proofing the dough. A 2 hour proof time is a *lot*, especially since the only gluten development you get is from fridge time (no knead).
In some cultures, you would be good to get married now that you know how to make bread. It looks amazing! Congrats! On your question about the bread making noises...just like coffee beans, the wheat continues to bake outside the oven until cooling down. That's why the process needs to be let to go on until finished. Your bread looks amazing but the Dutch oven needs a good scrub ;) Try the Zepter cooking pots, they're much easier to clean! Also, the bread knife would be a good tool in any kitchen where you bake bread, Scott. You nailed the crust, that would be the first pleasure in eating the bread. I love the recipe, and will certainly try it. The leven makes the holes. Way to go!
I’m an experience baker from grad school days (so a bit rusty), but I have never been able to get the no-knead bread to work for me. This video is making a world of difference. I’ve watched the Bittman video many times, but I think watching someone make the recipe truly for the first time is far more helpful than watching an experienced chef do it for the 1000th time. I’m still only halfway through the process, but what’s on my kitchen counter looks a lot more like Scott’s, so I’m trusting the process. Oh, and can we wonder just how it is that Scott has such an amazing kitchen? I’m in the Midwest and my counter space is a fraction of what he’s working with. I wish I could watch someone juggle balancing a cutting board over the sink and letting dough rise on top of the dryer. Alison Roman’s Thanksgiving dinner is the closest to real in that regard. Anyway, yes, please do more of these, even after we are all together again.
Great video, Scott! You have inspired me to give it a go !!
More, more, more Scott videos!
Very helpful, enjoyed you glee over you wonderful new loaf. Keep it up😊
I'm making this tomorrow def!
Great demonstration Scott! I would love some 😊
Was fun watching your video. And that wow factor was doubled bonus.
Unfortunately, my bread did not have big airy bubbles like your. But I still watch this video over and over again cause you made it fun 😃
this made me so happy
Okay we stan Scott making videos!
I love it!
The cracking of the crust is the crust setting along with the crumb as well. That is why they recommend not cutting until it has cooled down. The airy crumb is from the high hydration of the recipe.
Well done! I've made two loaves in this time of lock down.
Well done! No pun intended. Inspirational. You've shown that anyone can do it.
i just like it when you say " what's bottom now becomes top"
Thanks, great video, your experience is about the same as mine, I was very happy with my first loaf :)
Please pin the recipe or put it in the description above. Thanks. Now I want a dutch oven and to make bread. I bet that would make great french toast.
Awesome....just loved it...love from India 🇮🇳🇮🇳🇮🇳
Wowza!
amazing!!! we're all gonna be bread queens after this quarantine hehe : )
I laughed so much when you cut into it HAHAH congrats on ur bread!!!
You are too cute! Great outcome for your first time! Thanks 🙏🏽
Awesome vid!
Great video!
Great job!! Love the cornmeal idea. Just a thought, before I add my dough to the oven I split the top in an X to give it a chance to rise.
Iam making my first ever bread today i think its pretty cool how everything is coming along.
Everything about this video is awesome :-) you're so aesthetic sir
Scott in front of the camera again! Yay
Look at you, go you good thing. Hey Scott, I think it is the excitement of baking bread that made you out of breath. See ya, I'm off to the kitchen. Ps. Did you eat the whole loaf, I am going to. Thanks for sharing this. Inspiration that I kneaded. Oh bug..r. Sherie Rodrigues from Australia 🥳
Your bread looks wonderful :)
I’ve made this bread about six times and in three instances, it came out shaped like the Millennium Falcon. Still delicious, though.
Try placing the bread on parchment paper with the final rise. This will make it much easier and safer to transfer the bread in to your preheated Dutch oven. I do this all the time 🥰
We make this recipe all the time. and it never gets to cool in my house, it always gets immediately consumed...
❤️❤️
Wow the perfect recipe to make during Passover!! Great timing NYT
if you score the top of the bread it helps steam escape and your bread will rise a bit more
I make the no knead bread in two cast iron pans. One to put the bread in and the other pan to cover it.
I was going to try and get a RISE out of you folks with a crumby bread pun, but hey there's *no kneed* for that!
We appreciate the restraint, it must have been very difficult.
Excellent video. Only thing missing is a caption with the indigrents
i agree
This was charming
Distracted by adorable dimple. :)
@7:25 you'll never be gross. Even if you try your hardest, Scott!
👍👍😋😋
When you said your bread was crackling it reminded me of the scene in Ratatouille when the French chef talks about the sound of good bread lol ua-cam.com/video/rk6j7lhNf1o/v-deo.html
does anyone know if you can use regular dry yeast?
What was your room temperature during kneading and rising?
Did you flour the bottom half f the pot first?
Yum! Pour Olive Oil on it with tomatoes and Avocado!!!!!
Just use parchment paper I do SO much easier!!
would the recipe work the same with Gluten free flour?
These air pockets though!
I made this recipe this week and my bread wasn't as bubbly as his. Anyone know where I went wrong/how I can improve?
