  • When you freeze dry chickpeas, you can make a healthy alternative flour and also use the liquid they are packed in (called aquafaba) to make tasty whipped marshmallows. Once you have freeze dried chickpea or garbanzo bean flour, you can bake goods that are high in protein, high in fiber and gluten free. When you make aquafaba marshmallows, you have a delicious whipped marshmallow that has some nutrition.

    It's too bad that my body demands that I now consume a meat-centric Carnivore diet. Hummus used to be a favorite food.
    A pound of cooked chickpeas, best quality extra-virgin olive oil, finely minced fresh parsley, fresh lemon zest and juice, an entire head of roasted garlic, freshly ground black peppercorns, and salt. Eaten with freshly baked pita bread, or better yet, freshly baked onion naan.

    Nicely done. Use chick pea flour in bread and cracker it is a great diet aid. My personal recipe is to replace three of the four cups of flour with two cups of chick pea flour the third cup is a 50/50 blend of quinoa and chia powdered to flour. You need more liquid to bring to a dough.

    What would the marshmallows be like, if not FD? Would they set just like regular marshmallows or stay more like marshmallow fluff?

      They remain in a fluff for a bit, but eventually turn back into a thick liquid

    All bean water will whip up into a froth, not just garbanzo bean water.

    What happens if you simply freeze dry the aquafaba? Aquafaba powder is really expensive. Used for creating frothy cocktails. Great video!

    What about the flour as a base for a homemade protein bar. Maybe even a freeze dried protein bar with your marshmallow as s topping.

    How well does rehydrating a marshmallow work. For making rice crispy treats

      I use these in my coffee to make an instant sweetener and creamer. These marshmallows dissolve and the regular marshmallows are the same consistency as the swiss miss hot chocolate marshmallows when rehydrated.

    Coolbeans... I do gluten free and sugar free Marshmallows and have great success with FDing them... Gbabies love them.

      @@reneebeam426 I use a mixture of Pyure & Truvia... if I'm making like ice cream, I use Allulose most of the time. I've a diabetic in the house, so NO Sugar... we also limit carbs.

      @@amsohn1 thanks. I had been using monkfruit/erythitol blend and then the reports came out about the dangers, so i switched to xylitol from birch trees and now that is implicated in heart attack risk. I can't have the sugar either. I will tey your blend, thanks

      It does work for most egg replacements in baking
