    Excellent cook :) I also love my breville oven.. that oven is the work horse in my man cave kitchen. This technique has me intrigued. I might give it a try with a smaller section of a flat at some point. I would probably render 2 cups or so of beef tallow and pour it in a vacuum seal bag with the flat and put that in the breville overnight. It should achieve the same effect with just a bit less tallow. I also like to cook my briskets in a pan and collect those drippings for the same uses. As for charcoal on the Kamado Joe, I can't recommend highly enough to get one of the charcoal baskets, whether it be a KJ basket or another brand. I dont fuss with charcoal at all. When I am ready to cook, I lift my basket out, shake off the ash over the garbage can, put it back in the grill, add more charcoal and chunks if I'm adding smoke wood, fire it up and get cookin' :)

      Yes the basket is on my wish list. My Joetesserie and Basket budget went out the window when my local grill store put the JR on sale!

    What a great cook.
    I've been going back and forth for about 2 weeks now, deciding on my first smoker, specifically a reverse flow (shirley) and a Kamado Joe.
    Any major taste differences that you personally notice with a brisket or ribs?
    Which smoker do you prefer, mostly based on flavor?

      I loved the Shirley but it ran so clean and efficiently that you didn’t get a strong smoke flavor. I had to cut the exhaust to help with that.

    How big of a brisket can the classic 2 smoke? Just curious about length wise

      I haven’t tried anything over 13 lbs as that is the size of brisket I like the best no matter what smoker I use.
