- Rossella Rago and Nonna Michelina ( U_Zia_Michelina ) are making Rigatoni alla Norma (Pasta with fried Eggplant) , a traditional dish from Sicily with pasta, fried eggplant, tomato sauce and ricotta salata.

I came to see how they fried the eggplant and they cut just that part out, lmao.
This may be my favorite episode... When Nonna Michelina stood there stirring the sauce with her hand on her hip and singing i was immediately transported back to 1972 and my gramma Chicky's kitchen.
I love this. You should change the title to cooking with Nonni because there are some grandpas out there who have the magic touch too.

New subscriber here...What a find! Authentic Italian food...Sicilian no less! Yummm,... good food, great presenttion, enjoyed the background stuff too! This is a whole new world for me and I live and travel on a boat traveling the world so that's saying something! Can't decide whether it's you or the food that's more delicious. Do you ever add sugar to a sauce ?
Courtney C I personally don't. Some people do that as a family tradition or to cut the acidity in the tomatoes, but if you're using canned tomatoes is absolutely not necessary since canned tomatoes are picked at the height of freshness and the likelihood of acidity is very low. If you're using fresh tomatoes and you taste them first and you think they taste a little acidic then you could add a tiny bit of sugar to neutralize, but never enough that you can taste sugar. 1/2 a Teaspoon at the very most.
