    For a quick delicious Fudge (under 5 minutes), try the microwave fudge. What you do is; in a large bowl place 12 oz. of chocolate chips (which is 1 bag..nestle semi sweet is tasty), on top of chips dump 1 =14oz. can condensed milk, 1/2 stick of butter (I cut into 4 pieces), 1/4 tsp. salt. Microwave 3 1/2 minutes. This will be hot, remove and add 1 tsp. vanilla, and 1/2 cup of chopped almonds (or your favorite nut). HINT ..I usually micro 2 mins., stir, then micro the rest 1 1/2 mins. add rest of ingreds. and stir; but whatever floats your boat! Have a sprayed or butter parchment/waxed paper lined 8x8 inch pan ready to pour and spread fudge with the back of your spoon (is best to press into pan). Chill in fridge until hard enough to cut. This is delicious!! It comes out about 1/2 inch thick or better. Enjoy!

    @fabefanatic leave over night in fridge. Also maybe stir for a few more minutes and get it to cook down a bit more. it's hard to say on each stove. it is about 5 minutes. Get it to thicken a little more.

    @mareksison the foil was a bad idea. I don't know what I was thinking. It stuck to the fudge and was hard to remove.

    can i use condensed milk instead of evaporated milk and just put less sugar in it? because I have everything but the evaporated milk laying around and I don't feel like going to the store to get some

    hey my oven doesnt have a broiler flame but it does have a heating source on top can i use that to melt cheese?

    @CaptCharisma09 it never really got thick for me. Just kind of gooey like tootsie rolls at room temperature. try it on ice cream and let me know.

    @MissySancha milk that has been heated in a process to "evaporate" the water out of it which makes the milk thicker and denser than regular milk. evaporated milk has a high vitamin content and high calorie. and thats evaporated milk.

    @MissySancha i am not 100% sure but it's almost like cream but normally comes in a can. I don't know the exact difference, but my dad always seams to be drinking it out of the an around Christmas time :D

    @NoobPwner2448 I use final cut pro. The new version is coming out for mac in June 2011. if your on a PC then go with Adobe Premiere. it's the best PC editing software out there.

Milk is simply milk which has had some of the water (about 60%, technically) evaporated out of it. If you can't find it in a store, simply boil some regular milk until it's about half the quantity you started with (so in this recipe, start with a whole cup and simmer until just under half a cup is left). Voila, evaporated milk. :) It's thicker and creamier than fresh milk.

    @xxTwizllersxx no you can´t because it´s Dehydrated Milk, it´s a bit thicker than normal milk.. it tasts like a mix between cream and milk, so it hasn´t that much calories as cream but it tasts a bit like it.

    Sticky Fudge is old-fashioned fudge. It certainly isn't a brownie or anything, that's why fudge syrup is so thick on ice creams and such. You can put it in the fridge to harden it a bit and it taastes great.

    @NoobPwner2448 remember; all programs are free... if you look hard enough... personally, I like Sony Vegas 10e, but Jack recommends Final Cut Pro, so if you find that that works for you then by all means use that instead

    Sorry for the late answer lol, but I hope this will help.
    Condensed milk is basically evaporated milk mixed with sugar, so if you put in condensed milk, you don't need to add sugar either and the recipe becomes even more easier!

    never been a big fudge fan, but the hubby and i got some fudge when we vacationed out in Tombstone, Az a couple months ago. it was amazing! i think it was called grandma's fudge. it had marshmellow mixed in... yum! best.... fudge.... ever! btw, best vacation ever, too... lol =)

    @youtoofoofool actually, evaporated milk and powdered milk are not the same thing. Evaporated milk is a liquid. Powdered milk is not.

    You'll find it in the baking isle of your local super market. Make sure you are buying EVAPORATED milk and not condensed milk. Condensed milk is sweetened.

    Tried this. Yeah, it didn't firm up proper. Not sure why. I didn't have evaporated milk, so I just used the normal 2% at double the amount, and judged based on thickness. Looks rather similar to yours, though the boiling down, and the pan size left me with a thin sheet of it.

    When candy turns out gritty, it is (I believe) crystalized sugar. There are two pieces of advice given to avoid this. First, make sure there are no sugar crystals stuck to the sides of the pan, as they will be the seeds for more crystals. Second, once the sugar has melted, do not stir the mixture anymore, as this can trigger crystals.
    Many recipes also use something to interfere with crystals, like corn syrup or lemon juice. I'd expect the butter and cocoa to play that part here, though.

    Jack, I love your show, I've gotten some good ideas, it is funny, and I look forward to your new videos on Fridays...but that was some nasty fudge. It looked like ice cream sauce. There was too much sugar and not enough heat. I've never been a fan of timing the boil of candy. You have to use a candy thermometer. I just made some peanut butter fudge for Christmas and I think it needed to be about 235 deg. It turned out awesome. Firm, creamy, and not too sweet.
