Queso fresco is a good replacement for cotija cheese if you can find that kind. Avocado oil is usually used as a replacement for seed oil like vegetable and canola oil but I have never used it. You will have to let us know how you like it.

I touched the package of it at the store and thought it seemed soft...and the cotija was hard and crumbly. But maybe the flavor is similar? Correct me on this if you have used them both! @@shannonsortore3251 sometimes there is water/liquid in the package but they are the crumbly ones that you can crumble with a fork. Most people say that cotija is saltier but I am not sure that I could tell a difference when it was used on something.
Avocado oil has a higher smoking point so it's great for high heat cooking!
