This Google account will be the one that your company's IT admins share to manage and publish apps in the Google Play console. You can use an existing Google account or create a new one like any other google account but ensure not to use your person account in case if it needs to be transferred.

This was done sometime back, cannot remember the screen recorder used .. there are many available and in iPhone it is available as default feature

Ensure that you have necessary permissions to manage conditional access and the premium AAD licenses.
