I tuned into ludwig's stream during the match with the 1600 rated player, and I was absolutely baffled by ludwig's ability to play chess. He played the endgame so well and defended everything perfectly to push his pawn. I cant believe I fell for it.

Can't believe it because statically it's impossible. You can look at odds of one player beating another by using elo. After about a 500 point difference, the lower player has no chance of winning. Sure there are good days and bad days for players. Other than that there is no luck. Here is a 700 point difference...if lower player loses you can bet the farm there was cheating.
Especially considering a few days earlier he was missing obvious mates that his chat had to tell him about later.

You should do this again but troll Levy by having Stanz (or whoever you play) secretly have an expert too and neither tells their expert about the other. That way they basically play each other and get more and more confused by the other’s skills as the game goes on 😂 You could even not tell the audience and give them the same premise as this video and we’d all be played

Yeah, that is I think the only reason people fully believed it. At least against the 1600 rated player.
It often is like that tbh. If you know a move is good then you often realize why it is good, but finding it yourself is what is hard.
