I bought white peppercorns from a whole foods store here in Australia about 2 years ago. It was recommended by a chef on UA-cam. I opened the bay where the peppercorns were and I was almost knocked over by the extreme smell of them. I used them over my meals for a few days but I found them much hotter in taste than the black pepper corns so I added them to those and slowly I have become accustomed to the white pepper's scent and taste. Somehow they remind me of the little pepper shakers in my grandmother's cafe way back when I was a small child in Sydney. BTW pepper aids in digestion and absorption of some foods and turmeric is one.
Good to hear! The ground variety I get here in the U.S. is quite mild. Perhaps time strengthened yours, or they are just more flavorful by nature. Glad you are able to use them, though. Cheers!
I've always preferred black pepper. I'm not bothered too much about the appearance of it, it never bothers me, and I prefer the flavor. Never knew that black and white came from the same plant. I was happy to learn that.
Thank-you Chef Matt Degen for your sharing of this video which is informative and helpful in understanding the difference between white and black pepper. It is well explained.😊 Watching from Singapore.
despite being native to indonesia, black pepper are a lot less popular here especially for our traditional cookings. we mostly use the white one because of the district smell and taste
I first encountered white pepper cooking Japanese Miso Ramen. Other than that, I wouldn't have known there was white pepper. I only found this video becuase I wanted to know the difference. Great video. Straight to the point. 👍
I always use white pepper! I love the warmth and heat it gives, without the moldy flavour of black pepper. I even have it on my fryed egg, ppl try it, it is awesome
Hi chef, thanks for the explanation. I rarely use white pepper, the only dish I use it in is in the flour mix for fried chicken, along with black pepper.
If you are referring to peppers such as chiles, red peppers are usually more ripe -- such as with red bell peppers and red jalapenos, and they will each have their own distinct flavor. I use chile peppers in a vast variety of recipes. If you mean peppercorns, green peppercorns are often found in a brine and can be used like capers. Pink peppercorns are kind of their own thing. They are more rare but can be crushed or ground and used like black peppercorns. Hope that helps!

Great question. Short answer is, any way you'd like to. They are great as seasoning in more delicate dishes, like fish, butter sauces, and even some desserts. Pink peppercorns are not as harsh tasting as black peppercorns, so they are ideal when you want something a bit more subtle, yet still have that peppery goodness.
That is exactly how it smells to me and I had the same question. Either all while pepper have the smell of chicken manure and some people don’t feel it, or I just purchased the bad one. I purchased my white pepper from Spice Island brand here in the US. Any opinion on that brand and white pepper smelling different for some people?

Pepper comes from Malaysia ie native to Sarawak, Malaysia.
I find white pepper to be stronger, recipes usually ask for les than black
Black pepper has more flavour, white pepper is more spicy. I like to throw black pepper on a finished dish, but not white pepper.
I was told white pepper is spicier than black pepper corn. Is that true?
I personally find it milder and mellower. Cheers!
Thank you. 😄

The KFC recipe calls for 4 teaspoons of white pepper and one teaspoon for black pepper. It's the white pepper that gives it that distinctive taste.

Negative. Maybe counters look low or optics are off from camera angle?
White is not more 'mellow' than black, what is he saying
Meaning it has a less "punch" or slight heat kick compared to black pepper.
