Shrimp gumbo with sweet potato fries does sound odd. It didn't look good to me at all, but I love the traditional New Orleans dishes. If it's not broken, don't fix it. You should really get you some Café Du Monde beignet mix and make you some at home! It would be cool to see you try and make *authentic* beignets! And yes as a NOLA native the food was very lack luster.
As someone from the gulf coast area and lives in New Orleans as an adult…the gumbo hurt my heart looking at it lol. I don’t understand the sweet potato fries served with it 🤷🏻♀️
I've lived in south Louisiana all my life, just southwest of New Orleans, and I've never seen gumbo served with sweet potato fries. It's usually served with rice, and with a side of potato salad is really good with gumbo.

Beignets shouldn’t be hollow on the inside like that. The inside should be light and fluffy that’s the best part. Some fried okra would’ve been so good as a side! I wonder if Disney consulted with anyone actually from New Orleans about the food. It doesn’t seem like it.
I thought the opposite. Everyone says the donut like ones from Port Orleans aren’t airy enough. Guess I’ll just have to go to Cafe Du Monde & find out 😊
Needs to have fluffy inside and NO HONEY. I have never had a beignet with honey but a sopapilla is hollow and has honey when I ate them at various Mexican places in Texas. And rice always with gumbo with potato salad.
Yes, I agree that beignets should not be hollow (a Google search also agrees). If hollow the dough or the frying process probably wasn't done correctly. The ones at Port Orleans are pretty good but could be light & airier but without being hollow. 😊
Back in the early years of WDW, people complained about the selection of food, and now Disney has the best theme park food , and hopefully Tiana will step up and upgrade the food and add some more perks on the ride and develop a great New Orleans square….

Rice would have been an affordable alternative to sweet potato fries, and more authentic. They could have also used the rice to serve red beans and sausage, another affordable dish for food service, as well as etouffee. Sell all three together as a "flight". They missed the mark by not incorporating rice into the menu because it's so cheap to source. King cake is essentially cinnamon bread with purple, green, and gold sugar; affordable. I know that it's typically only supposed to be for Mardi Gras, but they celebrate Mardi Gras in the ride. Muffulettas require a lot of specific ingredients that wouldn't be cost effective if the sandwiches didn't sell well, as those ingredients wouldn't be useful in other items. But, whoever suggested that they not serve the gumbo over rice should be fired.
Disney needs to do better with these food options, the chicken/waffles that people love they get rid of or sorry throw 2 chicken tenders on, but they throw sweet potatoe fries to everything, come on disney how about some rice or Jambalaya

Please stop suggesting that Disney retheme any restaurant (Pecos Bill to Tiana's). What they need to do is build NEW restaurants/rides/walkways, etc. The parks are too darn crowded, so they're gonna have to find a way to expand!!! They've got 45 square miles.
I agree! But at this point I don’t think Disney would build a new restaurant for a while given their recent laziness. The food at Pecos is absolutely horrible so it needs a menu revamp anyway, why not make it New Orleans themed
