Imagining the whole Star Wars story in a medieval setting really wouldn’t change THAT much.
There are actually audiobook versions of the Star wars stories told in a Shakespearean way.

I can imagine this scene in a medieval style movie. Instead of being a moisture farmer on Tatooime, Luke is a grain farmer somewhere in Arabia. Instead of it being in Mos Eisley, the cantina is in some place where many trade routes cross. Instead of Luke seeing so many aliens, he sees people from the far reaches of these trade routes, like Mali, Scandinavia, China, India, etc.
Ooooo, Luke being a farmer in Jerusalem or surrounding areas would actually fit lol.

I have been running a crazy Star Wars RPG where there is a planet that is basically medieval fantasy. Technology doesn't work, the "aliens" are elves dwarves etc. Your music is so perfect for this campaign.
