Imagine that you as an actor who is not fluent in the language of the film, worked a grueling schedule and managed to BECOME Hurrem. Imaging you got pregnant. You refuse to continue? No.
Allegedly, her BF accused her of adultery and she had actor's block, so she was mentally exhausted, so she put herself first (after 3 years) and took care of herself.
There's a scene where "Hurren" faints in front of Suleyman and Ibrahim. You will notice Suleyman's face shocked and Ibrahim rushes to Hurrem's aid. In reality the actress did faint (hence the actor playing Ibrahim's real life reaction was to help a colleague, and the strange editing when the scene is cut short).
Hurrem was born in 1504, which makes her 17 when she gave birth to Mehmed in 1521. In 1543 when Mehmed died she would have been ~40. Meryem Uzerli was only 30 in 2013 when she decided to leave the TV series and Hurrem "went missing" (Mehmed was already over 20 at the time). So, we shouldn't be asking why the new acress is so much older, but rather: why the staff of the series didn't manage to sufficiently age Meryem via make-up or other means in her last season of the series. Mistery solved.🙂
I'm only upset they went with an actress so different. Her mannerisms and demeanor were just totally off. I never liked her to be honest. She just didn't mesh with what I got used to. I think they should have cast an actress a little younger and who looked closer to the original. The were bang on with the rest. It's was all just weird.
In real life, Aleksandra "Roksolana" Lisowska of the Kingdom of Poland (a.k.a. Hurrem), never went missing, right? There is no mention thereof in any Wikipedia language version I looked at.

That's quite sad and unfair Hurrem's character was the most important and her part was the hardest yet still they didn't pay her equally

The show changes actors age whenever they want. Like suleiman was gone for few months and suddenly 9 year old

such a pity! couldn't the director replace Meryem with someone as beautiful as she, the actress chosen just spoiled the last season
