    Hello! It is now completely autumn in Kyoto and the autumn leaves in the mountains are beautiful.
    I photographed the first step of sharpening Urushi Kurouch Gyuto that I just received. Ivan's sharpening process is based on a solid base before moving on to the next step, so the 200 grit alone made one video.

    Great video guys!
    As a sharpener it's so nice to see a video showing how arduous the ground work can be. Too many highlight reels out there showing a snappy progression through stones capped off with some quick finishing work on a pretty stone.

      Yes! The lower grit NSK Kogyo stones are very aggressive and fun to use.

    What gloves are these?

      These are nitrile gloves i wear one size down so the fit is extra snug
