I can see why Gordon would take a hotel management course. Both running a restaurant and running a hotel require a fair bit of overlap in terms of the responsibilities and the type of service you are providing your clientele.
Back in the UK he helped 2 hotels. The Gondola and Sangate. Im sure before he was super famous he worked in several too. Some of these hotel hell owners are just clueless though. I feel like I know more from just being aware, using common sense and paying attention.

They only redesign one room and then the owners have to pay for the others and, as some of the owners will say on the show, they can't afford to redecorate every room so they're dead in the water from the start. Also a lot of the new business comes just from fans of the show who book rooms and tables en masse which causes the place to becomes overwhelmed and then results in a flood of negative reviews. It's like how when chefs get a Michelin star but reject it because they know they won't be able to cope with the numbers such fame will bring. Personally I think these reality shows do people dirty more than they help them.

Almost every episode there is direct evidence that the owners are drowning in so much debt that its physically impossible for anyone to salvage the business without a massive cash injection to wipe the debt clean. You can't blame Kitchen Nightmares or Hotel Hell for the 2 million dollar loan you took out months before that finally brought the debtors to your door.

A large number of them actually do this, take their learning from Gordon and keep at it and don't go back to the old ways but many don't and just waste Gordon's time and effort by going back to their old ways that don't work.
Gordon's job is to help save the hotel. He actually doesn't have a good track record for saving hotels or restaurants even though he acts like an authority about it. It you are hired to save a business and your efforts don't save the business, then yes, the blame is on you, because you didn't accomplish the job your were hired for.

That's the full saying, and it means don't argue with customers about their preferences- exactly what the owner does here with the steak temperature. It goes hand in hand with "Know your territory." Making a sale can be about educating a customer about their options, but not making choices for them.

Try the episode which had the restaurant owner doing a (rather poor) belly dance performance with some of her staff for the guests, and apparently even tried to hit on Chef Ramsey! I mean to be fair, she wasn’t bad looking, and her body was quite fit for her age (especially her Gazongas 😆🥵, they were nicely sized), but she came off as very desperate, needful, and cringe all the way around, with a slight touch of cuckoo.🙄
I didn't think it was bad. However I wouldn't want someone yelling like that in a small room and it would be very off-putting. Probably would chuckle a bit in the situation, but it was a decent impression.
The singing has a tragic backstory. Cali was raised by a single mother who worked. Even under ideal conditions this kind of parenting is wrought with neglect. According to a clip from the episode Cali's mom would bring her to a bar she worked at and little Cali would sing to the delight of others. I suspect these moments were among the happiest of her childhood and provided her with the attention all children crave. She learned to associate her singing with her happiness. Unfortunately she grew up to be a mediocre at best singer and bought an entire hotel just to have an outlet for her psychological singing addiction.
You should cover the next Hotel Hell episode called "Calumet Inn" which ruined by 2 clueless spoiled sisters because their father was the investor. The big sister is a crybaby and she was 32 years old at that time while the younger sister is lazy and likes to wake up at 3 pm and go to the bar and barely work there. Also, the big sister ever gone for 3 months after just working for 2 weeks at that hotel. Gordon had enough and kicked those 2 out along with their parents.
Honestly, it's their parents fault to not raising their daughters properly. Seriously, they never have any jobs in their life and treatening the hotel like their own doll house? Even the older sister still called her father "Daddy". What? What kind of 32 years old called their Dad, Daddy? I stopped calling my dad as Daddy since when I was a teenager.

Many basic programs offer hospitality for the first year of curriculum, hotel, restaurant management, basic food handling rules. Then the students can choose their indepth direction after that intro year....chef, hotel gm, restaurant manager business side.
I don't really remember a lot about this episode but it was really weird to me how much the owner was riding the manager saying he was the problem when he had only been there two months and based on his and the other employees interviews it seems like none of them really had any say. Great video as always can't wait for the next one.
I rewatched the episode after reading this comment and I 100% think they hired Zan as a fall guy. There is absolutely no way, even with his lack of experience, he could do that much damage to the hotel in 2 months. That's also being extremely charitable and giving Cali the benefit of the doubt Zan could do whatever he wanted with the hotel and we all know from her furniture meltdown that her control issues never would allow that.

It seemed like she even managed to trick Gordon with her crocodile tears. He didn't exactly help himself by saying he would fire the person deemed to be a liability, but really the way that scene was set felt like a really obvious bait to ask an employee what they thought only to have it blow up in their face. Like that one KN with Joe that had Gordon interview the staff with him watching.

For as many problems as I have with this show and Kitchen Nightmares, I appreciate that Gordon never punches down. When a cook tells him "Hey, this is how they want us to do something, it's not in my control", he listens and isn't angry at them. He always goes straight for management, who actually is in charge and can change things when you yell at them. He doesn't make it the problem of people just trying to do their job with the limits they're given.
At least from my experience at college, when you take any kind of culinary course there's usually at least a little overlapping to hospitality and hotel management. I went to college for baking and pastry, but we still had a few classes in culinary and learned a lot of skills for business management. Usually you specialize in hotels in your third and fourth year, but you do get the general primer earlier on
I remember I went to one place that had the owner sing..badly and one guy yelled out “if I wanted to hear singing I would’ve went to jazz shut the fuck up or if you wanna sing while we eat, pay for it!” This owner got flustered and went off the stage and even tried to make him pay more.
I have heard that too but in a pub and the guy was definitely past his limit. He said something like the owner needs to give out free pints if he is going to sing.
How far this place had fallen! When I was at NMSU in the mid 90's, Mesón de Mesilla was one of the best boutique hotels in the area. The restaurant was highly praised, and the head chef at the time used to make awesome desserts (so I heard, because I was too poor of a college student to eat here, the chef even went on to lead kitchens at some fancy places in Manhattan).
You should talk about the old neighborhood, that restaurant from a guy called Randy that had a complete mess with old things and rats in his restaurant
and 20-year-old sofas and someone's ancient shoes under the seat, that was just hilarious and he wandered around with a bewildered look on his face making me wonder if he was genuinely a bit senile.
Cali seems like she just wants the hotel, or whatever she tries to turn it into, to just give her free money with no work involved. Every time it's failed she seems to have somebody to blame. "He backed out last second", "They just got up and left", "In two months he's ruined the hotel", "Gordon's changes weren't sustainable", etc. I'm also pretty convinced that she was drunk every moment of the Hotel Hell episode. She slurred her words a lot, eyes were always half-closed, her entire face is flushed beet red the whole time. So that doesn't really help things either.
You noticed that too? In olden days they called that a 'gin blossom' like a red flower with the bright red nose in the middle. A sign of a chronic alcoholic.
There is an episode from the British version of the show that I think would be fun to hear you discuss. E2 S5 "Piccolo Teatro" It was a small restaurant in Paris. The head chef was a psycho who clearly couldn't cook and didn't give a sh!t about the business. Gordon convinced the owner to fire him. After this, he refused to leave, and even grabbed a knife in a weird half hearted attempt at a threat. Gordon had to physically pick up the guy and remove him from the building. Then the next day the owner was several hours late and Gordon ran the place all by himself and even managed to make a decent profit. Pretty badass of Gordon assuming that wasn't staged.
Oh is that the one where when he got her a new chef the lady closed the place and just sorta ran for the hills? Yeah, I think somone said she was on drugs and with the way she looked i'd agree like it was just a. . .wow it was bad.
That's my fav ep. I doubt it was staged as it was a tiny restaurant and he had cooked a simple dish. Plus, it was only for lunchtime. For someone with Gordon's experience and speed, he would be able to do it all by himself.
@@tugbankert6581 Why? Almost all the places are shut down. It would just be visiting the old building, and seeing strangers that may or may not be familiar with the old show. Hotel Hell ended in 2016. Kitchen Nightmares ended in 2014.
This video made my day! I live in Las Cruces and Gordon Ramsay coming here was pretty awesome! I didn't get to meet him as I wasn't able to reserve in time for the filming of the episode but my friends that did said Gordon was very nice.
Im from Las Cruces and I can sort of understand why the owner was weary of serving Mexican food considering the location and how many established amazing Mexican restaurants there are there. Like competing with Andeles, La Posta, etc would be impossible.
The majority of professional singers have not been famous or well known and sing locally….it’s very possible she performed on cruises and local bars for a career for many years and there’s no “evidence” because it was pre widespread internet considering her age.

So strange. Back in the mid to late 90's Meson was the #1 restaurant in Las Cruces. I worked there when Chuck owned it. He sold it to Stan and Gina and the decline started from there. The chef that made it what it was split because things were getting weird.

It definitely seems that in the clips where she's singing, the producers like isolated the backing track and in post production replaced it with one that's in a different key. I'd say if it was in the right key, it would have been an average performance.

the waiver thing is really baffling to me, because hotels can already charge you for damage. you can potentially sue them if you can prove it wasn't you, but the point is, hotels can charge you whatever for whatever costs they deem necessary. I'm confused what she needed the waivers for in the first place.

Meson De Mesilla was originally founded in the 1970's or early 1980's by a French chef who wanted to move to southern NM. It had bin one of the most exclusive restraints in an area well know for fine dining. I remember as a kid my parents would go there for there anniversary and my dad would call for reservations a few weeks in advance.

I swear the best episodes of these series' are when a delusional person gets money then decides to buy a business with some of the lowest profit margins and highest turnover rates out of almost every business you can own. Its sad though that the delusions are usually a result of a survival mechanism from some form of trauma.

As someone in college for Hospitality Management aka (Hotel and Restaurant Management) we are required to take classes in all the basic types of hospitality business. I have no desire to work in a restaurant but I am required to take and currently am in a restaurant management class. While the class is in no ways going to make me an expert on the subject, it serves as an introduction to the business and a potential diving board if I ever decided to pursue that avenue. My point is that there is a lot of crossover in Hotel and Restaurant management and I am not surprised Ramsay studied it partially in college.
That fake review just reminded me of any favourite bad review. I was on holiday with my mum searching for somewhere to eat. One of the restaurants had a review that complained they had to wait 20 minutes (standard time) for food because the place was really busy. And that they didn’t sell Diet Coke (they had Pepsi options) but couldn’t understand why the waitress wasn’t willing to leave the restaurant and go to the shop to pick them up a bottle. We were in hysterics reading that.
I really wish this series still existed, more than the kitchen nightmares one! I've never worked in a restaurant but I DO work in tourism (currently in a nice hotel), and these episodes are definitely more dramatic and shocking for me, lol. Not to say the others aren't...
Found your channel today and I’m obsessed! This is such a niche commentary and I really enjoy it. I’ve seen every episode of Gordon’s shows so now I’m making my way through your channel watching all your video’s.
The review from the night the episode aired did specifically say that they had been there a couple of years ago. It could very well be a case of remembering the place from an episode and mentioning anything on the show would then make sense.
I love and appreciate the amount of dedication you have for these videos and I'm sure it takes quite a bit of time to create content like this but please try your best to upload more frequently.
I'm an El Paso native so I don't live far from Mesilla. I did pass through there once and it seems the place is still open. Which I might go eat at their restaurant next time I'm in town. And btw, I do recommend visiting Mesilla
The phones in that hotel are modern retro looking units made by crosley. The “rotary dials” on those phones are actually just buttons arranged in a circle.
I saw this episode and it really amazed me that she blamed years of failing on a manger that had been there for a few months. I was shocked that Ramsey took her side however, he did shoot himself in the foot when he was badmouthing the owner behind her back. 🤷🏾♀️ She had told him he would be running the place and then fired him for saying the same thing to the other workers. Many basic programs offer hospitality for the first year of curriculum, hotel, restaurant management, basic food handling rules. Then the students can choose their indepth direction after that intro year....chef, hotel gm, restaurant manager business side.
My technical school in the 80's had a program that I attended called "Food Service and Hotel/Restaurant Management."
in my country the college course for becoming a professional chef is literally called HRM (Hotel & Restaurant Management)
I don't really remember a lot about this episode but it was really weird to me how much the owner was riding the manager saying he was the problem when he had only been there two months and based on his and the other employees interviews it seems like none of them really had any say. Great video as always can't wait for the next one.
I rewatched the episode after reading this comment and I 100% think they hired Zan as a fall guy. There is absolutely no way, even with his lack of experience, he could do that much damage to the hotel in 2 months. That's also being extremely charitable and giving Cali the benefit of the doubt Zan could do whatever he wanted with the hotel and we all know from her furniture meltdown that her control issues never would allow that.
@@jimjones9631 yeah based on her behavior and some experiences with people like her she definitely hired him to have someone to blame. It seemed like she even managed to trick Gordon with her crocodile tears. He didn't exactly help himself by saying he would fire the person deemed to be a liability, but really the way that scene was set felt like a really obvious bait to ask an employee what they thought only to have it blow up in their face. Like that one KN with Joe that had Gordon interview the staff with him watching.
@@natesadz Nah, she didn't trick Gordon. He knew as the owner that Zan would have to go because of his comments about taking over her business. She sucked, but he wasn't much better telling new hires that he would be the "boss" and that she would be out soon.

Now that you mention it I do remember him planning on taking over being discussed. He definitely should have gone, but like I said I thought he got blamed for a lot of unreasonable stuff.

For as many problems as I have with this show and Kitchen Nightmares, I appreciate that Gordon never punches down. When a cook tells him "Hey, this is how they want us to do something, it's not in my control", he listens and isn't angry at them. He always goes straight for management, who actually is in charge and can change things when you yell at them. He doesn't make it the problem of people just trying to do their job with the limits they're given.
Maybe the reason she kept singing "If I Could Turn Back Time" is because she wished she could go back to not owning the hotel.

At least from my experience at college, when you take any kind of culinary course there's usually at least a little overlapping to hospitality and hotel management. I went to college for baking and pastry, but we still had a few classes in culinary and learned a lot of skills for business management. Usually you specialize in hotels in your third and fourth year, but you do get the general primer earlier on

I have heard that too but in a pub and the guy was definitely past his limit. He said something like the owner needs to give out free pints if he is going to sing.

How far this place had fallen! When I was at NMSU in the mid 90's, Mesón de Mesilla was one of the best boutique hotels in the area. The restaurant was highly praised, and the head chef at the time used to make awesome desserts (so I heard, because I was too poor of a college student to eat here, the chef even went on to lead kitchens at some fancy places in Manhattan).
Its possible the old owners sold it to the women, and she began to cut corners immediately

Cali seems like she just wants the hotel, or whatever she tries to turn it into, to just give her free money with no work involved. Every time it's failed she seems to have somebody to blame. "He backed out last second", "They just got up and left", "In two months he's ruined the hotel", "Gordon's changes weren't sustainable", etc. I'm also pretty convinced that she was drunk every moment of the Hotel Hell episode. She slurred her words a lot, eyes were always half-closed, her entire face is flushed beet red the whole time. So that doesn't really help things either.
You noticed that too? In olden days they called that a 'gin blossom' like a red flower with the bright red nose in the middle. A sign of a chronic alcoholic.

It was a small restaurant in Paris. The head chef was a psycho who clearly couldn't cook and didn't give a sh!t about the business. Gordon convinced the owner to fire him. After this, he refused to leave, and even grabbed a knife in a weird half hearted attempt at a threat. Gordon had to physically pick up the guy and remove him from the building.
Then the next day the owner was several hours late and Gordon ran the place all by himself and even managed to make a decent profit. Pretty badass of Gordon assuming that wasn't staged.
Oh is that the one where when he got her a new chef the lady closed the place and just sorta ran for the hills? Yeah, I think somone said she was on drugs and with the way she looked i'd agree like it was just a. . .wow it was bad.
She was a working "escort" and had a legit business on the side.
That's my fav ep. I doubt it was staged as it was a tiny restaurant and he had cooked a simple dish. Plus, it was only for lunchtime. For someone with Gordon's experience and speed, he would be able to do it all by himself.

@@tugbankert6581 Why? Almost all the places are shut down. It would just be visiting the old building, and seeing strangers that may or may not be familiar with the old show. Hotel Hell ended in 2016. Kitchen Nightmares ended in 2014.

I live in Las Cruces and Gordon Ramsay coming here was pretty awesome! I didn't get to meet him as I wasn't able to reserve in time for the filming of the episode but my friends that did said Gordon was very nice.

Im from Las Cruces and I can sort of understand why the owner was weary of serving Mexican food considering the location and how many established amazing Mexican restaurants there are there. Like competing with Andeles, La Posta, etc would be impossible.

The majority of professional singers have not been famous or well known and sing locally….it’s very possible she performed on cruises and local bars for a career for many years and there’s no “evidence” because it was pre widespread internet considering her age.

So strange. Back in the mid to late 90's Meson was the #1 restaurant in Las Cruces. I worked there when Chuck owned it. He sold it to Stan and Gina and the decline started from there. The chef that made it what it was split because things were getting weird.

the waiver thing is really baffling to me, because hotels can already charge you for damage. you can potentially sue them if you can prove it wasn't you, but the point is, hotels can charge you whatever for whatever costs they deem necessary. I'm confused what she needed the waivers for in the first place.

Meson De Mesilla was originally founded in the 1970's or early 1980's by a French chef who wanted to move to southern NM. It had bin one of the most exclusive restraints in an area well know for fine dining. I remember as a kid my parents would go there for there anniversary and my dad would call for reservations a few weeks in advance.
That breakfast from Chef David looked delicious ! Hope he is doing well!

I swear the best episodes of these series' are when a delusional person gets money then decides to buy a business with some of the lowest profit margins and highest turnover rates out of almost every business you can own. Its sad though that the delusions are usually a result of a survival mechanism from some form of trauma.

As someone in college for Hospitality Management aka (Hotel and Restaurant Management) we are required to take classes in all the basic types of hospitality business. I have no desire to work in a restaurant but I am required to take and currently am in a restaurant management class. While the class is in no ways going to make me an expert on the subject, it serves as an introduction to the business and a potential diving board if I ever decided to pursue that avenue. My point is that there is a lot of crossover in Hotel and Restaurant management and I am not surprised Ramsay studied it partially in college.

That fake review just reminded me of any favourite bad review. I was on holiday with my mum searching for somewhere to eat. One of the restaurants had a review that complained they had to wait 20 minutes (standard time) for food because the place was really busy. And that they didn’t sell Diet Coke (they had Pepsi options) but couldn’t understand why the waitress wasn’t willing to leave the restaurant and go to the shop to pick them up a bottle. We were in hysterics reading that.
I really wish this series still existed, more than the kitchen nightmares one! I've never worked in a restaurant but I DO work in tourism (currently in a nice hotel), and these episodes are definitely more dramatic and shocking for me, lol. Not to say the others aren't...
The pressing of the rotary took me out. 😆 🤣 I can't stop laughing. Maybe because I own 1 for nostalgia purposes.

The review from the night the episode aired did specifically say that they had been there a couple of years ago. It could very well be a case of remembering the place from an episode and mentioning anything on the show would then make sense.

I saw this episode and it really amazed me that she blamed years of failing on a manger that had been there for a few months. I was shocked that Ramsey took her side however, he did shoot himself in the foot when he was badmouthing the owner behind her back. 🤷🏾♀️
