In bhindi ki sabzi i think garlic is very important to add, I don't why people skip garlic in bhindi, and I think most sookhi sabzi garlic onion is must if you eat onion garlic,
In my home my mom makes best bhindi ki sabzi, it never get sticky
So here the receipe-
Take mustard oil
Add cumin and little bit methi seeds if you want to and lil bit ajwain
Then my mummy adds curry patta also then garlic, chilli, and onion saute till golden brown, then add all routine masala like turmeric , dhaniya powder, and gram masala etc then add bhindi fry it, main tip is here that do not cover bhindi, others wise it get soggy and will stick ,fry it in open pan in full flame and in the last add salt
Trust me, I think this is the best way of making bhindi ki sabzi

Always use ajwin and nimbhu ka rash bcoz bhindi mai chip chipa pan Jo hota hai woh body ke liye not good to always use ajwin in the beginning and nimbhu ka rash milane se woh chichipapan bhi dur hojata hai and digestion mai bhi easy hota hai
