Looks fantastic. Question: Why does chicken like this come out tough and chewy from so many Chinese take-out places? Orange chicken, General Tso's chicken, Sesame chicken - almost all the places I have tried these dishes the chicken is dry and/or hard to chew, the breading hard/crunchy etc. Are they using leftovers or simply cooking everything too long in the second frying, or only frying once to save time? I simply do not order these dishes out anymore, preferring to make my own at home.
You already guessed most of it. 😊 The chicken is fried twice (maybe even three times) and usually prepared before hand, not made to order. They over-fry in order to keep it crunchy longer. Another reason is because some restaurants use more breading than chicken to cut costs.
