    I didn’t go with the Chud Box because I have a WSM and can get very similar direct heat results from it. I did, however, purchase the Chud stainless steel grill that should ship this month! I've only done ribs but need to try out chicken this way. As always, enjoyed the vid, Joe! Keep smokin'!

    Joe, thanks for promoting the benefits of direct heat cooking. UA-cam is so inundated with indirect heat (offset smoker) videos that direct heat does not get its due, especially for proteins like chicken. P.S. Smokin' Joe: The Biggest Bite in BBQ should be your slogan. 😂 And Bradley owes you a commission.

    Hey Joe, thanks for the content. You are very charismatic presenter, i always cheer for your cooks to succeed 😅. The flavor added by the charcoal itself (made of South American quebracho blanco) and the chicken fat dripping over the fire is really unique. I'm Brazilian and direct heat with hot fire is nearly the only way there and it is great (you can even cook beef ribs - the full 13 bones at once is not rare- and brisket like this, given it is far away enough from the heat).     Nothing beats direct heat chicken. ...throw a small oak split on the coals to start the cook... So good.

    Nice Bird my Friend. I have a OK Joe Bronco and a PBX and I Love to hang Chickens over the fire. I add Cherry chunks cause I like the flavor but I really like the color it adds. Great cook Joe.

    Yes, I use aluminum foil to clean the grill. There have been incidents where people reported to ER with intestinal bowel obstruction due to wire grill brush particles being consumed (how it gets into the cook is beyond me). Great vid.

    I love direct heat chicken on my OKC Joe bronco drum smoker! I never thought to clean my grates with tinfoil! Will try it next time I cook. Thanks for the video Joe!

    I wipe down grates with balls of aluminum foil AFTER each cook, not before. Works great and keeps them pretty clean that way and ready for next cook.

    I get my gloves at Harbor freight when they go on sale from $10 per/100 to $5 per /100. I usually get 5 or so boxes at a time.

    Just put on some cotton liners under those nitrile gloves then you can handle hot meat. My son worked as a butcher in a local grocery store. He brought home cut gloves daily which work perfectly for liners.

    When you are splitting the chickens - Why cut through the backbone instead of removing it altogether? My guess is to either maintain rigidity on the halves or avoid rib splinters but I would love to hear your reasoning. I also would love for you to work with HEB to get some of your sausages on sale throughout the state - it can happen!

    Actually have never seen anyone use foil to rub the grill. Usually wire brush. Foil is a good idea.

    Nice presentation. Never forget it’s not the cooker, it’s the individual along with their technique. Someone claims he can cook anyone’s ass off with a trash can. Moral of the story the cooker isn’t nearly as important as your skills.
