Joe, thanks for promoting the benefits of direct heat cooking. UA-cam is so inundated with indirect heat (offset smoker) videos that direct heat does not get its due, especially for proteins like chicken. P.S. The flavor added by the charcoal itself (made of South American quebracho blanco) and the chicken fat dripping over the fire is really unique. I'm Brazilian and direct heat with hot fire is nearly the only way there and it is great (you can even cook beef ribs - the full 13 bones at once is not rare- and brisket like this, given it is far away enough from the heat). Yes, I use aluminum foil to clean the grill. There have been incidents where people reported to ER with intestinal bowel obstruction due to wire grill brush particles being consumed (how it gets into the cook is beyond me). Great vid.
I love direct heat chicken on my OKC Joe bronco drum smoker! I never thought to clean my grates with tinfoil! Will try it next time I cook. Thanks for the video Joe!
Joe; I am at my SIL"s cottage on Saginaw Bay and will be doing a chicken on a gas grill today and use this method, modified for a Weber gas grill. Wish me luck. FYI I really enjoyed this short video.
Just put on some cotton liners under those nitrile gloves then you can handle hot meat. My son worked as a butcher in a local grocery store. He brought home cut gloves daily which work perfectly for liners.
When you are splitting the chickens - Why cut through the backbone instead of removing it altogether? My guess is to either maintain rigidity on the halves or avoid rib splinters but I would love to hear your reasoning. I also would love for you to work with HEB to get some of your sausages on sale throughout the state - it can happen!

I wipe down grates with balls of aluminum foil AFTER each cook, not before. Works great and keeps them pretty clean that way and ready for next cook.
