Chin was right to season the steak just before cooking. If you salt early it will draw the moisture from the meat.
But everything else was so wrong it broke me.

Dry brine is when you season the meat and leave it overnight in the fridge, the more moisture you draw out of the meat the more flavour is concentrated in the meat. Not diluted by moisture.

I’ve used daily since 2013, since then my life has been better every year, am I addicted? Absolutely. Do I recommend this to others? Not at all. I don’t like all the attention brought to this amazing plant. All the extracts, gummies, drinks, are just asking for another ban attempt by the FDA like 2016.
