Dilik is usually used to add flavour when making stew and is added while cooking but awaze is served as is with enjera or on the side with Tibsi and other meat dishes (kind of used as dip)
We want the fermentation process to take place just like sour dough bread. Not only it tastes better but also makes it healthy. Many people use self-rising flour to to make injera in short period of time.
Tena'adam (Fringed rue in English) & Adri (Mustard seed in English). You can find Mustard seed in Indian stores. Fringed rue I grow it in my garden but you can make awaze without it if you cant find it in local garden sales.
Olive oil, spiced red pepper (from Eritrea), apple cider vinegar, coriander, cumin, turmeric, salt, cardamom, black coriander, (two spices are missing, they are native to Eritrea)
