To make the meat texture more fine for hotdog chili like the Varsity, you must boil the ground meat while chopping it in beef broth. The end result is Varsity or Coney Island style finished meat texture. I know before you said you'd never boil the meat, but you should try cooking it like this once.
You had me until you put the bell pepper in there. Never had coney/chili sauce ever with bell peppers. I’ve had them in Minnesota Michigan Chicago New York and Balance Cynwyd and none have peppers. That has got to be a southern thing. I don’t like peppers at all in anything except sautéed on my Italian sausage sandwich. If I want sauce I drive to my local Coney Island and buy some. It’s the very best ever. They also make burgers with it by dipping the entire cooked burger in the sauce. Delicious. By the way, don’t listen to what people tell you in the comments section. You are one heck of a cook and baker and I’ve learned a few things from you myself and I’m a wonderful cook, mainly Polish and Italian with a German dish now and then. My German pork chops with onion and beer are incredible.

Growing up my mom always made low-fat coleslaw. It may be a German thing. I make it with a food processor and cut the cabbage into small chunks. Then using the regular blade I whiz it up in seconds. Put it in a bowl and then I add 2 or 3 Splenda packets, salt and pepper, and equal amounts cider vinegar and water. That's all. No mayo. It keeps for a week or two in the fridge. I also don't put ketchup on a hot dog nor do I put mustard on a hamburger. Personal preference. We always used Bunker Hill Chili No Beans after skimming off the grease on top. Thank you for showing us what you do.

I don’t think my mother ever bought can food. She made everything from scratch. I must say she was a wonderful cook. If I like something I will buy the can if not I make it. I prefer slaw and onions on my hot dogs. I buy Ball Park also
Wow! I fixed what I call coney dogs on Saturday. Ate them again today before seeing this video. Coney sauce is more ketchup based and similar to sloppy joe mixture than chili sauce and then served over hotdogs. Used ballpark all beef hotdogs cooked in the air fryer.

Tammy, Being from WV we're all about our favorite way of making hot dogs.. consisting of a soft bun- ball park franks- homemade hot dog chili- homemade cole slaw- topped off with diced onions. You can add mustard ketchup relish etc to your hearts desire or to each his own. Hot dog in natural casings is my favorite. They are popular hot dogs in NJ and I always bring a box home when we visit my daddy. They r super expensive but well worth it and they are foot longs. I make like a Manwich type hamburger chili sauce for our hot dogs. It’s got a little sweetness in it and I add a title chili powder to it.
I use 85/15 ground turkey for everything calling for ground beef. Ingles frequently has it on sale 2 for $5.00. I stock up and brown it up with salt, pepper, and garlic and freeze for future use. I use my vacuum sealer and it freezes perfectly. I add seasonings for whatever dish I'm making for the meal. Saves time too. I only use ground beef for meatloaf.
Have any of u tried the relish that they serve in NY on those hot dog stands? They take onion and Caramelize them then some ketchup, mustard some chili flakes, a dash of hot sauce a shake of onion and garlic powder and they serve it hot. So good and all NY people eat it

@@bryant6524 …yes! This is how we make WV hot dog sauce. The ground beef is always boiled and then we use a potato masher. Boiling is a game changer!

Hot dog in natural casings is my favorite. They are popular hot dogs in NJ and I always bring a box home when we visit my daddy. They r super expensive but well worth it and they are foot longs. I make like a Manwich type hamburger chili sauce for our hot dogs. It’s got a little sweetness in it and I add a title chili powder to it.
I use 85/15 ground turkey for everything calling for ground beef. Ingles frequently has it on sale 2 for $5.00. I stock up and brown it up with salt, pepper, and garlic and freeze for future use. I use my vacuum sealer and it freezes perfectly. I add seasonings for whatever dish I'm making for the meal. Saves time too. I only use ground beef for meatloaf.

Have any of u tried the relish that they serve in NY on those hot dog stands? They take onion and Caramelize them then some ketchup, mustard some chili flakes, a dash of hot sauce a shake of onion and garlic powder and they serve it hot. So good and all NY people eat it

I absolutely love hotdogs,but its the sodium fot me. I eat them only once or twice a yesr. Do you know of a way to reduce the salt so I can them more than once a year. And we buy Nathan"s hhotdogs

I have been so clumsy lately so I can appreciate the frustration of having a mess to clean up. Side note….in Canada where I live there are charging $5 for a head of cabbage 😮
