      Set theory answers all these questions you are asking. What mathematicians mean by 0,1, +, - etc

      The natural numbers are assumed to exist (we must start from somewhere) but the basic operations are defined from set theory

      There are multiple ways to explain + and -. One is that + and - are abstractions from everyday experience. If you have a group of n things and another groups of m things, and you lump them together, you will now have n + m things in your group. Similarly, if you have n things and take away m things, you now have n - m things.
      However, if you are unsatisfied this this explanation, there is a way to formalize arithmetic (+ - * /), which mathematicians use. en.wikipedia.org/wiki/Peano_axioms This explains exactly how + and - work and how you can define them just using logic.
