For the torture chamber, you should put a zombie in the corner where the villagers go to when you ring the bell.
It switched. They ran to a corner furthest from the bell first, but then to another closer to the bell the second time. A zombie in every corner? That could work.

The diamond spawns have changed, if the diamond is exposed to air then its likely to generate mostly 1 but if the block isnt exposed to air it can spawn 6, 7 or 8 or more. So water caves are usefull now

12:25 some suggestions for the torture chamber (you might need to expand it a bit lol):
Grab some nametags, name some of them Dinnerbone so they hang upside down, then put some fences high up and tie the Dinnerbone villagers to them with leads. Put a big pit of lava, so they're dangling right above certain death, slowly roasting alive from the lava's heat.
Make a simple villager breeder that drops into fenced in zombies, then put the Iron Golem inside a cage in front of it to watch the zombies eat the children.
Make a dispenser with healing arrows to shoot down at a villager, stabbing it with arrows but never letting it die.
Put some villagers trapped in a pool of water with one block tall walls so they can never escape, as vengeance for all the times I got stuck in village wells when I was new to the game.
Make the piston end rod machine. You know what I'm talking about. Oh, and put it next to the fenced in zombies to traumatize the iron golem even more.
Put a beehive and some flowers so the villagers screaming will irritate the bees and make them sting the villagers, and so they all get allergies from the pollen.
Throw some redstone and skeleton skulls on the ground to look like blood (for ambiance)
Make an illager shoot their crossbow until it breaks with an afk machine, then drop the illager in with the villagers. Villagers are very racist and will be horrified of the illager, even if it doesn't have a weapon and isn't attacking them.

You and palpers should try and get one of the SCP mods, I think there are a few SCP mods I don't really know how mods work but-
SCP is a horror based site If you've played lethal company then the monsters from there are similar to the monsters in the scp foundation, there are just lots. Lots more in the SCP foundation.
I also don't know if they naturally spawn or what version they are in- so that may be a problem but I guess it depends on the mods.
Just an idea for a new series/video or something to add onto one of your series:D

1 block of air in the wall, to remind them what outside looks like.
Zombies at the 4 corners, to constantly scare them.
Iron golems in pain constant around them. (Eg: an iron farm, ig)
Remove all there work station blocks, and enjoy!
