Too bad this exact layout doesnt exist in real life it's a shame to see this type of flying only exist in the simulator. I'd love to see you set up your own course and really master, and upload some gopro footage of the whole thing it would be really amazing.
If anyone is wondering how this is done, here's how. The game has a speedhack applied to slow it down, you can slow a game down as much as you want this way. The speed might be say 10% of regular speed, he then recorded his hands and game footage. Then in post he sped up his hands and the video footage to normal speeds, you can tell his left thumb is moving unnaturally quick jerking up and down often in this video. Since the game was played in slow motion this must've taken a while.
He likely won't answer. It's obvious that he has his PID settings turned way down, if you slow down the video you can see that he's making very large movements on the right stick, several times he goes to the limits of the gimbals range of motion, and yet the quad doesn't flip over. The default settings are like 0.75, I think he's changed his to 0.3 or 0.4, somewhere around there. He's not likely to have changed the physics except to make it more realistic, since he races he would want this to match his real life set up as much as possible.

That's rates. In a game you should have to mess with the PID's. the control of the drone should be perfect. i.e. how quickly your rates get to where your sticks says they should be.

Not always pal ppl actually fly this at full speed and if u flown velo u will know it's a fast sim u need quick inputs
