I made this tonight and used a little apple cider vinegar and water instead of the wine, because that is all that I had in the pantry. Hands down, the best roast I have ever made! Thank you Mary for all of your helpful recipes over the years. You are truly a gifted teacher.
I love the idea of blending in the sinew, etc. I'm trying it right now. My father always ate all the veins off of chicken bones and grossed my mom out. It's probably why he is still around at 91🎉
This is almost exactly how I made my pot roast in a caste iron skillet. It is unfortunate that as a Retired Senior, I am not able to buy a pot roast anymore. I pay so much for Medical Insurance it kills my budget. I am thinking of finding a Rancher and buying a bundle. This recipe will also be great with chicken or a pork roast. Love your information! Perfect timing because I have a roast to cook this weekend. I like how you explain the how's and why's behind your process. Wishing your son continued happiness and healing.
Looks so delicious! Bones add so much flavor, but good luck finding a bone in chuck roast nowadays. I've found an easy way around that; I add a couple of beef neck bones. Several gloves of garlic would be my only addition, I love the stuff.
Yes, you have the perfect substitution. But be sure to check out Shirttail Creek Farm. They have great bone-in chuck roast which is what I used in the video. And if you go to the shopping guide on my website, marysnest.com you’ll see a discount code For $10 off their offerings.❤️🤗❤️

I am contrary to a lot of people about grass fed and corn fed beef. I grew up eating corn and pasture fed beef. To me, the corn fed tastes better. There's more fat in the meat, but it's tasty and tender.
Introduce ur fam to root vegs with this! Use rutabagas, parsnips, turnips along with some potatoes & carrots. I add whole mushrooms too. I then started putting them in beef stews n soups. Roasted beets are great (and can be “pickled” afterward) but I never put them to cook w/beef. My kids all like roots and even can eat mashed parsnips I do a sheet pan root roast with assorted small chunked roots and melted fat drizzled over, then s&p. Afterward I vinegar them well and we eat on these thruout the week. I eat them cold out of the fridge! Squashes are even good in with roasts and in stews. Learn to love ur roots. Ditch the grains!
If im not mistaken, the chopped celery and chopped onion are not included in the recipe. (Looking for the lineup of veggies the roast sits on). Can you please help me with those amounts?
