Looks like a super fun little project. My buddy and I rebuild a small boat like this a while back and it went so much faster than the work on my 23ft. Kinda feel the itch to get another small boat to flip
I live in the US and grew up in Upstate NY. On the lakes in the Adirondack mountains these boats were very common in the 60's and 70's. They were fairly good quality utility boats used for getting around the lakes. These were not considered 'high end' boats at the time. They were relatively inexpensive and functional.

Please do not attach aluminium to stainless steel, the aluminium will corrode very quickly via a process called galvanic corrosion, this is an electrical reaction between dissimilar metals.

Lowering the seats will have also improved high speed maneuverability, by lowering the centre of gravity.

You can use your circular saw on aluminum as well. It would be easier for long, straight cuts.

I hope your plywood is marine grade material, using non marine grade plywood will corrode the aluminum to dust. Good luck.

to me, it looks like you are using masking tape, not duct tape. Though it might look different in Germany
the aluminium strip around the edge of the cockpit will get extremely hot in the summer - suggest you pad it or refit the wood
