Hi Thyda, While I was in Cambodia in 2019 in March, it was dry season and hot. I saw the neighbour being big bottles of palm flower juice home on the back of the motorbike. Then she put it in a big wok in the shed and lit the big fire under it. Then left it with much wood to keep burning during the evening. She is busy mother looking after children also. Her step daughter made dinner before she came home. In the morning, I went back to see and the Palm juice was concentrated down into a thick liquid. She takes it to local market to sell it as sugar. Here we can buy blocks of hard palm sugar in the Chinese food shops. It reminded me of my happy time seeing your lovely country and meeting Cambodian people. I enjoyed my visit there. Very cool i buy palm sugar at the market here in townbut i did not know how it was made i thought maybe like maple syrup with the sap i had no idea but the cooking is about the same as making maple sugar or sugar from cain my grandfather used to make sugar syrup or sargum as we cald it and brown sugar but i was young when he did that and i was not allowed to be close they were afraid i could get burned but i remember them stirring and stirring and stirring for it aeemed like all day thank you for showing this process i really like this it is interesting to learn how things are done and Van is a big hlep to you and everyone else to he is a good kid from what i see of him always helping people i wish you all good luck happienes and health

Usually, the male palm trees can produce with much less palm juice than female palm trees. Male palm trees will not produce any fruits like female palm trees. It's a lot of hard work to climb these tall trees and can be very dangerous job for the farmers. They can only do this during the dry season to make extra incomes. Thanks for sharing!
