    Im making some Blackberry Blast which is almost done. Cant wait to taste it! This is a really novel approach compared to regular wine making. Its shorter, faster, and more efficient. Now if it tastes awesome...? Im making these kits forever.

    what happens if you dont go to the 6 gallon mark , is there more alcohol level or no
    also how do you preserve for more time

      Hi Brad. If you don't fill it to the 6 gllaon mark, you will have a wine with a fuller body, more alcohol but also a higher acid level (which could make the wine taste more tart than intended). To improve the shelf life, add 1/4 tsp of potassium meta at bottling. Thanks!
