Just found yr channel… recently diagnosed with diabetes…trying to figure out what I can eat- no salt, no dairy, no sugar … trying to learn to make food from scratch so I can monitor what’s in it…. First, I am so sorry you have been diagnosed with diabetes. It will definitely be an adjustment. Second, I am glad you find my recipes helpful! Please don't hesitate to reach out if you have any questions or need some guidance. I don't always respond to UA-cam comments (because there are so many), but I always respond to comments on my blog.
I made this, needing to do it in batches as I have a smaller sized food processor. I then put the entire ground up mix in a bowl, then added the baking soda, and lemon juice, for which I subbed apple cider vinegar. Baked in 3 silicone mini loaf pans. Came out well, tho needed to take them out of loaf pans after 50 mins, flip them over as the undersides were very moist and put them back in for 10 mins to dry out more. Nice moist texture, though, very happy with the results.

how did it taste? how was the texture when eating it? did u toast it?
Tasted like a lentil bread- I’ve made GF breads with red lentils in the past, and am used to the flavor. Hard for me to describe. Texture is moist, holds well, even after a few days, hasn’t dried out. I warm the slices up but don’t toast them, as I prefer a softer texture. I like the fact it gives extra plant based protein in an easy to digest manner. My tummy is sensitive to unsprouted legumes, and I have have absolutely no issues digesting this bread.

By the way, this recipe gives me a new way to use my green lentils. They take forever to cook and forever doesn't seem to break it down in the pot of water! Sprouting, yes, why didn't I think of it? Thank you Petra.
Honestly, Tanner has gotten so much better when it comes to bread and crackers. He never eats white store-bought crackers anymore (he really likes all the seed crackers I make) but he will eat store-bought, mostly whole grain, bread from time to time.

Thank you for another wonderful recipe! I started sprouting the lentils and can’t wait to make the bread! Can I use psyllium powder instead of whole husk? (That’s what I already have a big container of). Should I still use 40 grams per the recipe? Thank you.
Yes, you can. Psyllium powder is more concentrated, though. Typically, for every 4 Tbsp. of whole psyllium husk, you would use 3 Tbsp. of psyllium powder. Let me know if you have any other questions :)
Thanks for sharing another wonderful recipe! Quick question: do you by any chance have a similar recipe but using lentil flour instead? I was gifted a couple of pounds of it and I'm not sure what to do with it yet. Thanks!
I don't, but you could use the lentil flour as the chickpea flour substitute in this recipe. You could also replace some of the lentils with lentil flour. (Lentil flour is essentially just ground lentils). You would just need to experiment with how much water to add because I used soaked (aka rehydrated) lentils.
Clicked right away on the title just to see what in the world such a bread could be made of! I used to sprout lentils regularly (fell out of the habit) and have seen lentil bread recipes before, but never thought to try it. Now after seeing that perfect looking loaf, I need to try making this before it gets hot here soon! I do avoid gluten and too much dairy, but eat tons of nuts daily. So I'll try adding chopped walnuts and cinnamon, and see how that turns out. 😋
Do you think that also adding banana (for banana walnut bread) would also work with this recipe? Or should I stick to other non-gluten flours for that?
That's great! I think that adding a banana would work. However, in that case, I would recommend reducing the amount of liquid you add. Please let me know how it turns out if you give it a try :)

Maybe chia seeds?
Chia seeds might work, but they are a weaker binder than psyllium, so you would likely need to use more to get the same binding effect.

Hi guys, hope you’re all well. Thanks for this, I’m defo gonna try as I’m looking to increasing my protein intake. Q - How do you store this bread, eg fridge, freezer etc and how long should it stay fresh? Thank hubby for his feedback too👍
Thank you! I am copying and pasting the storing instructions from my blog:
1. Storing at room temperature: wrap the bread in a large tea towel (so it can breathe) and store it in a cool place for up to 3 days. Room temperature is ideal for maintaining proper crumb and crust texture.
2. Freezing: slice the bread first. Transfer individual slices into an airtight bag, one on top of the other, in an alternating 90-degree pattern, and press out as much air as possible. Freeze for up to 3 months.

Honestly, the bread should turn out well with any type of lentils.
With warmer weather sprouting happens faster?
Yes! However, if it's too warm, sprout growth can stagnate and, in the worst case scenario, excessive temperatures can allow harmful microbes to grow on the sprouts.
can I use flaxseed instead of hemp hearts? ❤
Yes, you can, just don't use more than the recipe calls for. Flax seeds are a type of gelatinous seeds (just like chia seeds), so they have the potential to change the texture of the bread. If you use just 1/4 of a cup, it will be fine.

@@glamboo8106 I'd use xanthan gum (2 or 3 teaspoons) if you are leaving the psyllium out. Chia or flax just won't cut it.

This looks great...but I can't eat hemp hearts....could you suggest some options for this as I have many sensitivities. In fact, rice, sorghum, chickpea and a bit of sesame I can have. I checked your blog but didn't see substitutions there. thank you so much
Absolutely - feel free to use sesame seeds instead. Sunflower seeds would work well, too. Or even flax seeds.
