By the way, this recipe gives me a new way to use my green lentils. They take forever to cook and forever doesn't seem to break it down in the pot of water! Sprouting, yes, why didn't I think of it? Thank you Petra.
Honestly, Tanner has gotten so much better when it comes to bread and crackers. He never eats white store-bought crackers anymore (he really likes all the seed crackers I make) but he will eat store-bought, mostly whole grain, bread from time to time.
I made this, needing to do it in batches as I have a smaller sized food processor. I then put the entire ground up mix in a bowl, then added the baking soda, and lemon juice, for which I subbed apple cider vinegar. Baked in 3 silicone mini loaf pans. Came out well, tho needed to take them out of loaf pans after 50 mins, flip them over as the undersides were very moist and put them back in for 10 mins to dry out more. Nice moist texture, though, very happy with the results.

Tasted like a lentil bread- I’ve made GF breads with red lentils in the past, and am used to the flavor. Hard for me to describe. Texture is moist, holds well, even after a few days, hasn’t dried out. I warm the slices up but don’t toast them, as I prefer a softer texture. I like the fact it gives extra plant based protein in an easy to digest manner. My tummy is sensitive to unsprouted legumes, and I have have absolutely no issues digesting this bread.

Clicked right away on the title just to see what in the world such a bread could be made of! I used to sprout lentils regularly (fell out of the habit) and have seen lentil bread recipes before, but never thought to try it. Now after seeing that perfect looking loaf, I need to try making this before it gets hot here soon! I do avoid gluten and too much dairy, but eat tons of nuts daily. So I'll try adding chopped walnuts and cinnamon, and see how that turns out. 😋 Do you think that also adding banana (for banana walnut bread) would also work with this recipe? Or should I stick to other non-gluten flours for that?
That's great! I think that adding a banana would work. However, in that case, I would recommend reducing the amount of liquid you add. Please let me know how it turns out if you give it a try :)

Yes, you can. Psyllium powder is more concentrated, though. Typically, for every 4 Tbsp. of whole psyllium husk, you would use 3 Tbsp. of psyllium powder. Let me know if you have any other questions :)

Storing at room temperature: wrap the bread in a large tea towel (so it can breathe) and store it in a cool place for up to 3 days. Room temperature is ideal for maintaining proper crumb and crust texture. 2. Freezing: slice the bread first. Transfer individual slices into an airtight bag, one on top of the other, in an alternating 90-degree pattern, and press out as much air as possible. Freeze for up to 3 months.
Hmm, I haven't tried it, but you can certainly experiment with it. Just know that psyllium is a stronger binder than flax seeds or chia seeds, so you would likely need to use more to get the same binding effect.

I don't, but you could use the lentil flour as the chickpea flour substitute in this recipe. You could also replace some of the lentils with lentil flour. (Lentil flour is essentially just ground lentils). You would just need to experiment with how much water to add because I used soaked (aka rehydrated) lentils.

I made this today, i liked it , the taste was not that bad, but mine shrank once cooled, i used flakseeds instead of hemp hearts

@@glamboo8106 I'd use xanthan gum (2 or 3 teaspoons) if you are leaving the psyllium out. Chia or flax just won't cut it.

Absolutely - feel free to use sesame seeds instead. Sunflower seeds would work well, too. Or even flax seeds.
