Uncle Chris thanks for the recipe! I was born in Curaçao now living in The Netherlands. My Mom would heat a neutral oil slowly with the Roucou. It will colour the oil and this oil would be used for fish and stews. I’ve never seen it done with water. You live and learn 😀. Great. Love your videos🍀🇳🇱🌷❤️😘

Great video, Chris. Your channel makes me appreciate Caribbean cuisine even more, and this here is a great example of why. In Belize, we also use the annatto seed, but we make more of a paste from it and we call it "recado". It's crucial to many Belizean dishes. I don't know that I've ever seen it made this way, or as another one of your viewers shared, with oil. Thanks for sharing this, bossman!

I've been looking for achiote (rocou) paste which is used for Mexican Al pastor recipes. I think they take the seeds and grind them into a paste. In this recipe seen here are the seeds discarded after?

Hey from Trinidad never used it ....Dont know how to teach us something new..I use brown sugar for stews.
this is added along with the brown sugar method of stewing. not a replacement.
