    Honestly, the perennial garden is the ultimate garden. It takes more time to get established, but once it does... it's a blessing for years to come.

      Actually, if you plant the right perennials, they can go crazy pretty quickly (two seasons). There is the old gardening adage that people tend to plant perennials too closely together and annuals too far apart.

    The cougar might have been coincidence, but it might also have been watching & learning your routine. You might want to mix it up for awhile or not go alone. Hope this doesn’t frighten you. Just want you to be safe. Have been watching your videos for years and love them. I also started canning in my twenties and have never stopped. So satisfying! Be well. ❤

      great advice...i thought the same thing and to do more than you suggested , when she is alone especially. (ez target then ) and there must be things she can have with her that can temporarily or for long enough disable an attacker w/o doing permanent harm. or even something that emits a sound that would make them run the other way? etc....

    What a gift to see a cougar in the wild. That being said, they are extremely smart, best to take precautions when out and about.

    I do a cold shower and it is a feeling I can’t explain . Lifts up my mood . Makes me productive.
    I grow a garden and it is wonderful feeling. I love canning . Grew up helping my parents .

    I love that others have given the spiritual meaning of cougar! My husbands totem is cougar and I love cougars in all ways! On the practical side, you need to be aware at all times in the wild, and may need to carry protection. Usually you won’t need it for anything other than noise to scare them away, but consider actual protection in case more than noise is needed! Better safe than food for cubs. Seriously!

      bear spray is really one of the most effective forms of protection up in the mountains, so easy to carry and light

      I was watching a video a few weeks ago and a cougar followed this guy for a ways charging him occasionally, and finally he fired his pistol at it and it ran away. He didn't shoot it, but without the firearm the cougar would have become emboldened to the point where the outcome wouldn't have been good.

      No, they don't watch you for days. They don't like humans, they are actually more scared of us than we are of them and an attack is extremely rare. One in a billion. You are more likely to get hit by lightening then attacked by a mountain lion. They don't like being around us at all in general. The only reason they would attack is being ill and starving, or to scare you away from babies. They aren't sitting there watching you for days planning an attack.

    If I'm not mistaken, it is necessary to pressure can broth. It can't be water bath canned and be shelf stable. General rule of thumb is acidic foods like tomato sauce, fruit jams, etc can be water bath canned but non-acidic foods like broth and beans need to be pressure canned.

    Hello sweet Isabel, that one commenter might be right about that cougar sizing you up. I'm an 85 year old dude now and have caned for many decades, so enjoyable. Your recipes are wonderful.     I think you should reduce the garden surface. Just to be able to handle it. My garden is so much smaller and I really understand what you meen. It’s getting hotter and dryer.

    Hey Isabel! Lovely video!
    Wanted to mention that you should take out the part in your video where you say you can water bath can vegetable broth, so people actually don't do that. You can get really sick, you can't actually water bath can vegetable broth, it's not acidic enough for just water bath canning, only pressure canning at a weight/gauge appropriate for your elevation.

    Very beautiful animals but yes keep aware of your surroundings so you don’t walk right up on them. You don’t want them to feel they need to defend themselves. And yes running isn’t always the best scenario it can trigger that prey instinct in them. Just be careful and you should be ok. Stay safe. Thanks for the video.     Another good tip for cooking beans at high altitude is to add baking soda. I’m at 8200 ft elevation and the boiling times are longer here. I add baking soda to boil or pressure cook them, and pressure cooking them is the best way to ensure soft, delicious beans! Make a bunch and can the rest that you don’t immediately use

    The trick to the best baguettes is fine flower, a long ferment (at least 24 hours), wet dough, and steam in the oven which gives a lovely crust - no olive oil needed! Thanks for sharing.

    Hi Isabel,
    If I can give you some advice for bouquets in general, it's best to remove at least two-thirds of the green leaves to keep the flowers fresh for as long as possible. The leaves pump out all the water, preventing the petals from hydrating.
    That's what I've noticed,

    I live near a cougar too. I walk with bear bells if I’m not singing:) and I keep a high-pitch alarm at the ready in case one is following or I start feeling one is near to warn off. I do have bears here too. In the event of a pursuit or attack, I also carry coyote spray and a knife. Don’t ever want to have to use them but it’s a last-resort defence so I can get away.

      Hi! I noticed you mentioned "singing" and you made me remember when I lived in a rural area full of snakes. When I was in tall grass with my dogs I always used to sing because I noticed that snakes could sense us and get away in time for not meeting with us. I remember that the only encounters I had occurred only when i was calm and silent!
      I still don't know if singing is for a fact a prevention for meeting snakes, but at least in that area it actally was! I find it really interesting and fascinating

      I live in a similar place. I carry bear spray an attach metal on metal to my pack so I make noise with every step. This way, I don't surprise anyone. I like your idea about the high pitched alarm, good one. It's such an honor to see these and other beautiful creatures and to understand how best to protect yourself while sharing where they live.     When you cook beans also put a teaspoon of baking soda, that will make them more soft, in a fry pan drop some olive oil, spicys, chop red and white onions, tomatoe and scalions, fry them and at the end added to the already cooked beans, and let me know, for more color on the beans you can use carrots too.

    With mountain lions, it’s best to walk backwards make sure you have two big rocks and banging them together to scare them off. This is literally happened to me!
    And never run!

    I have the CHAMPION JUICER with the Flour Mill attachment. I LOVE IT! I have had this and been using it for 12+ years and I have never (cross my fingers) had to replace anything on it. If you take care of it your Champion Juicer will last you a life time! I was able to justify the cost since its a two in one! As much you love to bake and make things from scratch I think you will love grinding your own flour. If you haven’t done the research also, the different types of wheat berries will produce different variations in the flour…like white soft for pastries, hard red for whole wheat flour, etc….

    Oh my God, you were so close to the mountain lion...
    Also here in India, my Grandma definitely believes that freshly milled flour is the best and higher in nutrition. So we usually go to the local mill and get our grains milled fresh. I have noticed that it definitely tastes better. The smell, the texture, the taste, everything feels more luxurious for sure.

      @@thardyryll no believing about it...KNOWING ....TRY IT ...AND research it: LIKE for instance: the filming people did of cougars while hiking and were stalked and attacked (also on all news stations) such as : hiker Kyle Burgess who filmed a cougar that was stalking him for six minutes on a trail in Utah. "A hiker in Utah took video showing a cougar chasing him for nearly six minutes." MAYBE you are just so inexperienced compared to the rest of us you like to TRY to make fun of ..so u feel better about yourself? that is what is crap...YOUR OPINIONS .

      Hiker describes 'terrifying' encounter with cougar that stalked him, lunged at him twice Cody McLachlan recorded chilling video of big cat spying on him along trail near Nelson, B.C.
      it happens all the time. There ARE filmed attacks...where have YOU been to insist otherwise and to dictate to others who's is valid based on YOUR criteria"? about: your dispute and opinions on what people KNOW that you say they " believe"?

    That was a good sized Cougar. Maybe carry some bear spray. It would only irritate it's eyes for 30 to 40 minutes with no permanent damage...plenty of time to put good enough distance between you two. You'd also need to watch vids about how to use it correctly. Also good for the much more dangerous two-legged mammals.

    If you come up on a cougar never run. If it appears to be stalking you do not turn away from it. Wouldn't be a bad idea to carry bear spray with you. Just pay attention to your surroundings and keep your wits about you and you should be fine. Much love.

    I bought a flour mill for my Kitchenaid mixer. It works brilliantly and the wheat berry flour is so delicious the bread tastes almost like cake. Highly recommend. You can quickly mill just enough flour for a loaf or two. -- (also, please pick up some bear spray and carry with you on your mountain hikes. safety first)

    Isabel! I’ve been milling my own flour for a year using the WonderMill Electric Grain Grinder. It’s not the most aesthetic one out there, but my mom has been using hers for as long as I can remember and I’m 24, so you can trust that it will last a while. The flour flavor is also lovely and it’s got more nutrients when milled fresh. I just use Azur standard to get bulk grain and it’s so easy.

    Isabel, have you ever considered having a WOOFER stay on the land to help you with the gardens? 🪴
    ETA: Also, I highly recommend roasting your veggie scraps before making the stock. I mix a little miso and water together and coat all the veg, then roast at 300F for 1 hour. It really intensifies and deepens the flavor! 💚💚

    There's a YT video from a guy who defends cougars and looks out for their "interests" and he said one of the encounters that converted him to his pro-cougar stance was when he had fallen asleep on a rock one sunny afternoon with a jacket under his head and was woken by a giant tongue licking the back of his neck. It was a cougar, who then just walked on down into the valley!

      I know this guy! I recorded a sound on my walk in WA state and didn't know what it was. He confirmed it was a caterwauling cougar. He recommended a Storm whistle, and said he had used one to scare cougars, bears, moose, and elk. I bought one and didn't need to use it for 2 years until literally two weeks ago when I encountered a black bear only 6 feet from me. Blew the storm whistle at the top of my lungs and it scared him away. Now I recommend the Storm whistle to everyone!

    I wondered when you would run into a mountain lion and get it on video! I’ve been in Northern California for 25 yrs now and I still have not seen one but when I hike, it’s always on my mind! You were definitely fortunate he was not interested in you because I’ve seen many videos of them stalking hikers. Glad you remembered not to run but gosh I’d be feeling the same way!! They typically hang out in a area for a bit so be careful and prepared. I believe in bear mace and have it in my backpack. Maybe drape a large red scarf around your hips so if he appears again you can wave your scarf around to appear big. Anyway, I know you already know all this. You made yet another successful baguette! Perhaps owning a bakery / coffee shop is in your future! 😊❤

    Isabele, i do know someone who grows and mills her own wheat. She started learning this years ago from a woman from Africa that noticed Her and Her kids were sick all the time, and once She started doing this, Her family was much healthier.

    you should put shade cloth around the garden fence will stop the wind bringing weed seed....then mow or weed wak the weeds often and can use flame thrower to burn the weeds and add the compost ash to soik will be great for it....less work xx

    If anyone tries the face mask try avoiding mixing it with a metal spoon (or mixing in a metal bowl)! I'm not sure about the type of clay she used but I know metal reduces the benefits of bentonite clay. And I try to avoid it with all types of clay, I use a wooden spoon instead.

      There's pink, green, for inner and skin cleansing, rassoul for hair, skin , face. Mix with rose or orange water. Or Arganoil or other. A drop of essential oil...Try to get domeone to rub you with mixture after a very steamy bath or shower.

    I just learned about the wonders of baking your own breads this year (a yearly goal of mine). There are lots of great tricks to put on top of your breads just before baking. Some use olive oil, some use a mix of egg whites plus water.

    Cougars are a rare sight! While I would say I would definitely reflect on its appearance in a more spiritual way, I'd also say maybe dont visit that area for a while, and set up some trail cams!

    My husband volunteered at the Cedar Creek Grist Mill for seventeen years. Fresh Home milling wheat and corn preserves the vitamins. So yes, mill your grain at home. It’s probably more important to locate organic grain to avoid gmo’s and chemicals.

    I'm 69 years old and when I'm not playing, I'm napping! Yes I mill my own flour. *Stone ground is a must.* Retsel is the best small electric mill. Hand mills are kind lame, but it is possible to motorize a small Retsel hand mill, which is what I did. Because of the huge amount of screening to make white flour, it isn't worth doing that. But your whole wheat baked goods will be supreme in flavor in comparison to store-bought whole wheat flour.

    One thing I'd like to correct: vegetable stock (and all other stock) HAS to be pressure canned. That is the safest way. Water bath canning is for high acid items such as jams & pickles.
    Of course, if you're okay preserving your food in an unsafe way, that's on you...but, please, don't feed others your unsafe food.

    You should plant more perenials like raspberries, blue berries etc... and try sheet mulching for the weeds. It's the easier lowest maintenance way to get rid of weeds.

    I discovered an easy way to deal with weeds in the garden, especially in between the rows… I bought a little weed eater that runs on rechargeable batteries and I carve my way through my garden. It’s nearly impossible to keep weeds out of your garden but that trick has saved me so much time

    Your garden you should look into permaculture and put dried grass or straw on the ground it will help with the weeding because the weeds won't grow as much...

    I have so many questions! Can we see a full tiny house tour? What’s begind the door? A fridge? Anything else? Where’s the studio in relation to the tiny house? Can we get a tour of that too? Do the kitties just go potty outside? That must be amazing to not have to keep a litter box.

      I think it's just Black now. And thought to have seen a litter box inside. Not sure though. There's also a pantry behind the door, to the right. She did a little tour in an older video (can't recall which one though, sorry).

    I love my flour mill, but you have to think about that it will always be whole grain flour. Best thing is that you can use it with oats and buckwheat as well...

      July 30th, 2020 my oldest son dj passed from covid he was in the hospital for 2 months he had just turned 39 .... I was so hurt emotionally, physically, spiritually, not knowing much about social media one night I happen to find this channel and in my hurt I started watching you and it was somethg I do it was somethg that helped me. 😇

    This reminds me lifestyle living in Yosemite Valley Calif. I too took swims in the cold River. The cool mountain breeze, breathtaking views, my 3 yrs living in solace and peace surrounded by nature.

    I once came across an entire pack of mountain lions, which is so unusual, because i think they're not even pack animals, but there were 6 of them. i was hiking off trail (great decision making, i know) and it was such a shock. nothing happened! they just passed by me. but man, i can feel your fear!!

      @cherries and coconuts there are some places in South America where cougars are not only social, but actually live in groups. That must have been an awesome sight that you witnessed! And I can understand why your heart skipped a beat.

    I have a flour mill attachment for a Kitchen-Aid mixer. Works well enough for wheat berries, but is a bit coarser then the commercially ground flour I get from the same farm. Tastes great though, and allegedly provides more nurturance that breaks down with age in commercially ground flour.

    You can take the veggies you boiled for the broth and blend them and dehydrate them to make powdered or cubed broth

    I would warmly suggest you to invest in a flour mill, it's such a life changer. Not only everything tastes better, but it feels so much more nutritious and filling, starting from a simple oat porridge in the morning. I use Komo Fidibus and it's nice because it's made mainly from wood and metal and you can tell the quality is just like the machines in the old days, made to serve for many years.

    I mill my own wheat berries for flour. If you have a kitchen aid mixer, you can just buy a mill attachment (very cheap) and mill your flour.

    A grain mill is definitely worth it. Just make sure you get a good one that uses stone. Fermented dough with fresh milled flour is amazing!

    Supposedly, it is better to only use a nonmetallic utensil because the metal immediately destroys the benefits in honey. This is why honey is often seen with a wooden spoon/implement.

    I think the recipe changes when using a flour mill. The flour takes longer to absorb the liquids and other ingredients. I think that's what the folks that own one says. They are extremely expensive and I've also contemplated buying one, but i just can't bring myself to spend that kind of money. I go to our local Amish store and buy bread flour by the 50lb bags. This flour is amazing, the best I've ever used. I've had so much luck in everything sourdough that i make with this flour, so I'm sticking with it. I make so many different kinds of things with sourdough. So much that eating any other kind of bread without it, kinda tastes nasty to me now.

    I think you need a barrel to put all your used water (like after you cook your veggies and pasta) when the barrel is half full use the water to water your plants the water will add all the nutrients back into your soil and plants.

    My parents live in Tonasket, within town limits they had a mountain lion or cougar that killed a dear in their driveway a couple summers ago. Be safe & carry something!

    Country Living mill is great. You can manually use it or get the motor. I have the disc to grind up corn and beans too.

      A goat or a mule. Mule's are protective and particularly devastating.The damn things will beat the crap out of the mountain lion. No kidding. Farmers use them to protect there flocks. One might be suprised

    You live in a beautiful area! I'd go as far as to say, heaven on earth. That being said (and this is just my opinion), I would go nowhere in those woods without a gun. That was very scary to watch and hear what you were feeling. It scared me to death and I'm on a desktop. They said if you should encounter a mountain lion, not to run (he'll think of you as prey), remain calm (I could never remain calm), and just stand there or either back away slowly.
