Great video! Just wondering if i could use a fresh cod fish to skip the soaking processe!
Great question! So my guess is that fresh cod wouldn’t have the exact same result because of the texture. However, it might still cream if you try. So if you use fresh cod, I would make sure to taste to adjust the salt and to not sear or cook the cod so a crust or crisp forms since that could prevent a creamier final product.

Looks really great. Good job with your Dad. Never made it this way. I will try it. Usually make it in a sauce with potatoes, carrots potatoes, wrinkled black olives, onion, like a stew.

I understand this is supposed to be served at room temperature, but I'm hoping to make in advance for my Christmas Eve dinner. Do you think I should try to warm it up a bit on the stove - or serve it chilled?
I would just take it out prior to serving so it can come more to room temperature instead of warming it! Sometimes I eat it cold but I never really eat it warm because I think the texture and flavor is better chilled. Hope that helps!

Another question- I know baccalaureate smells pretty fishy. Does soaking and cooking it diminish the smell?
Yes! As I mention, you need to soak it and change the water for multiple days and that really helps alter the smell. I will say in general it shouldn’t be super strong smell but I also am used to the aroma of fish throughout the Christmas season. But overall the final product shouldn’t have a smell that will be strong in your kitchen or if you are to bring it somewhere - unlike a fried fish like smelts or calamari as an example.
