Now that i think about it, tasting dr pepper without all the sweetness would probably be a really interesting drink. There are so many flavors and spices in there that would be more pronounced.

Ginger Beer would be good... it has that nice strong taste already that make it a perfect mixer to add to alcohol... might as well make it the main course instead of the mixer!

Okay, I'm in the part of the Carolinas where they have a local brand called Cheerwine. It's pretty good and has a cane sugar version on the glass bottles. They are very sweet but good, least for me. Cheerwine was even accused by Karens back in the day, claiming that they were selling real wine to kids (Its cane sugar soda), but maybe you can reignite that fear! Bet a Cheerwine wine would be interesting

6% is a bit low, you have added a bit of sugar to it to get around 12% and then it can sulfited and be a bit more shelf stable
Did that with my mtn dew mead. Wanted to see what would happen from just soda though.

If I remember correctly you need to use 118 yeast because that Dr pepper has preservatives in it and it's going to slow down the fermentation process
