I have tried 4 of your Recipes….amazing flavours. I have been asked to cook for 70 people at the local Mosque. Plz advise what and how to cook it. Thanks
Thank you for trusting my recipes! Cooking for 70 people is a very responsible and labor-intensive task. I think it is best to cook those dishes that can be prepared in advance as much as possible in the form of semi-finished products, and as soon as people gather, quickly fry in sauce and serve. For example, chicken or beef fillet can be cut up in 1 day, marinated and put in the refrigerator under cling film (so that it does not air out). The next morning, prepare vegetables for meat and a separate side dish. The side dish can be steamed rice (an ideal option, simple and fast), or something store-bought (bread, flatbread, etc.). After that, heat up oil in a large wok and fry the meat until done. Leave in the dish. As soon as guests begin to gather, start frying vegetables with ready-made meat semi-finished product, quickly fry all this in the appropriate sauce.
I don't know how your guests will eat. Are there several people sitting at the table or should each person be served in portions? If in portions, then a chicken dish, a beef dish and some vegetables are enough. Well, and rice, or bread or a flatbread. If you need to put dishes on the table as common dishes for everyone, then at least one dish is needed for each guest of this table. For example, a large table for 10 people, then there should be at least 10 different dishes on the table.
Thank you. I’m chuffed for advise from a Professional! We cook Indo/Pak , British, Iranian or Middle Eastern foods mainly, for now. We serve according to the dish and number of volunteers available on the day, mainly fixed portions on individual plates then top ups as requested. Will go thru your Recipes again and will follow your advise and Recipe instructions to the Dot. Pre / Half cook on Saturday 21st December then finish off and serve on Sunday evening! Will keep you posted
