It's actually possible to beat Vidarr without Kratos interrupting the fight. You need to use Genis and hit the enemy with a maxed out Indignation or better yet Indignation Judgment to beat him with a single blow. Sadly the game doesn't have a special cutscene for that unlikely scenario and simply continues as normal instead

Cool, will try that one day. I'd reduce his HP close to the threshold that leads to the fight's interruption, prior to Genis' spell.
Did you actually level him up to this point?
