Welcome back to our channel! Today, we're excited to share a luxurious and creamy dish - Makhmali Handi. This rich, velvety chicken curry is perfect for special occasions or when you want to treat yourself to something extraordinary.
In this video, we'll guide you through each step to create this delicious Makhmali Handi right in your kitchen. From marinating the chicken to making the creamy, flavorful gravy, we've got you covered.
Ingredients:
Chicken: 500g, cut into pieces
Yogurt: 1 cup
Fresh Cream: 1/2 cup
Onion: 1 medium, finely chopped
Ginger-Garlic Paste: 1 tbsp
Green Chilies: 2, slit
Tomato Puree: 4
Garam Masala: 1 tsp
Turmeric Powder: 1/2 tsp
Red Chili Powder: 1 tsp
Garam masala: 1/2 tsp
Cumin Seeds: 1 tsp
Fresh Coriander: For garnish
Salt: To taste
Oil: 3/4 cup
Cream 1/2 cup
Steps:
Marinate the Chicken: In a bowl, mix the chicken pieces with yogurt, turmeric powder, and salt. Let it marinate for at least 30 minutes.
Prepare the Base: Heat oil and butter in a handi (or heavy-bottomed pot). Add cumin seeds and let them splutter. Add the finely chopped onions and sauté until golden brown.
Add Aromatics: Add ginger-garlic paste and green chilies. Cook for a minute until fragrant.
Build the Gravy: Add tomato puree and cook until the oil separates. Stir in the cashew nut paste, coriander powder, red chili powder, and garam masala. Mix well.
Cook the Chicken: Add the marinated chicken pieces and cook until the chicken is done and the oil separates from the gravy.
Finish with Cream: Lower the heat and stir in fresh cream. Cook for another 5 minutes on low heat.
Garnish: Garnish with freshly chopped coriander leaves.
Serve your Makhmali Handi hot with naan, roti, or steamed rice.
